Shrooms do it again. In the past it was believed that fungi dispersed their spores through wind. Well… that it technically still true, but they don’t sit around waiting for a breeze to blow by, they actually make it happen themselves! They do this by releasing water vapour that creates a small, localised air stream. The cooling of the vapour then causes cells to move around the area.

Oyster mushrooms have an aligned, fibrous structure that behaves a little like meat. Those fibres hold water evenly but release it readily in a hot pan, which encourages browning. The gills and thin cap edges crisp beautifully, while the thicker parts stay juicy. This gives you contrast in a single bite: crisp edges and tender centres. It is the reason a simple plate of oysters on toast with garlic and parsley can feel complete.

Flavour wise, Oyster mushrooms sit in a sweet spot between delicate and deeply savoury. They carry natural glutamates that build umami without tasting heavy. That balance is why they pair so well with light aromatic ingredients such as lemon, dill, and white wine, but also stand up to soy, miso, and chilli. If you are reducing meat, you may find Oyster mushrooms a helpful bridge because they satisfy the desire for a browned, savoury bite with a short cooking time and a lighter feel.

Fresh wood ear mushrooms are gelatinous, ear-shaped fungi harvested from dead hardwood trees. They are used in Asian cuisine, particularly in soups, stir-fries, and salads, prized for their unique, slightly crunchy texture and mild, earthy flavor. To prepare them, trim off any stub, wash thoroughly, and slice before cooking to retain a springy texture.

Culinary uses

Soups: Add to clear or hot and sour soups for a chewy texture.

Stir-fries: Include in stir-fries after other ingredients have cooked down slightly, cooking for a few extra minutes until they brown slightly.

Salads: Use fresh, sliced, and dressed in a salad for a crunchy element.

Other dishes: Incorporate into dumplings, spring rolls, or ramen.

We love growing lion's mane mushrooms, oyster mushrooms, chestnut mushrooms and more. We hand grow, pick, and harvest specialty gourmet mushrooms not typically found in local grocery stores.  We provide the community with farm-to-table mushrooms by working directly with local chefs, restaurants, and selling directly to consumers. We use sustainable farming practices to ensure that our crops are healthy and free from harmful chemicals. Anything we can't sell fresh is dried and sold as slices or a powder that can be used for cooking, coffee, and teas.

This course introduces the basic concepts and processes involved in composting and mushroom growing, followed by questions to consolidate your learning. Immediate feedback is provided once you submit your answers.

During the live training, all participants start with the same foundational knowledge, allowing more time to address individual questions.
