Lush Kale salad
Chiffonade Lacinato kale with chickpeas, mustard microgreens, mixed seeds, juicy plums and quinoa. Paired with a mustard, honey and extra virgin olive oil vinaigrette
Organic Lacinato Kale, a cousin variety of the traditional green kale is also known as Tuscan Kale or Black Kale. Lacinato Kale has the same high nutritional value and health benefits as Green Kale but has a more textured, bumpy look to its leaves. It is high in Vitamin A and C and contains significant concentrations of calcium and iron.
Chickpeas contain between 65-75 per cent of insoluble fibre that remains undigested all the way down to the colon. Recent studies have shown that the fibre can be metabolised by bacteria in the colon to produce relatively large amounts of short chain fatty acids (SCFAs), including acetic, propionic, and butyric acid. These SCFAs provide fuel to the cells that line your intestinal wall. By supporting the energy needs of our intestinal cells, the SCFAs made from these fibers can help lower your risk of colon problems, including your risk of colon cancer.
Plums have been the subject of repeated health research for their high content of unique phytonutrients called neochlorogenic and chlorogenic acid. These substances found in plum and prune are classified as phenols, and their function as antioxidants has been well-documented. These damage-preventing substances are particularly effective in neutralizing a particularly dangerous oxygen radical called superoxide anion radical, and they have also been shown to help prevent oxygen-based damage to fats. Since our cell membranes, brain cells and molecules such as cholesterol are largely composed of fats, preventing free radical damage to fats is no small benefit.
Quinoa (pronounced as kinwah; quinua in Spanish) grains carry 14-18 g of protein per 100 g. They compose almost all of the essential amino acids required for the human body at excellent proportions, especially in lysine.
Quinoa is a very good source of B-complex, vitamin E and essential fatty acids such as linoleic and alpha-linolenic acid.
