is a Dairy and Hospitality business started in 1976 by the Aga’s, Bhathena’s and Chinoy’s (hence the A.B.C. in the name). 40 years later the business is owned and run by Sohrab Chinoy and his family. The brand with its trademark logo of the happy cow is most popular for its multi cuisine restaurants at the Koregaon Park property in Pune. ABC is also a premier manufacturer and retail seller of milk

and milk products - specializing in the manufacture of many different varieties of cheese. Our main theme here at ABC is “where health meets lifestyle”. We do not use any chemical preservatives in our products and everything is completely natural and organic. Even at our farm we practice organic farming and grow our own rice wheat and many different types of herbs. All the cheeses manufactured at ABC are made using vegetarian rennet and are completely vegetarian in keeping with the Indian sentiment. Besides the dairy farm and the specialty restaurants, ABC Farms also has as an Ayurvedic Centre and Spa in Pune, a Resort in Goa which also houses an Italian restaurant. The latest addition is a getaway tucked into the green hills of Bhivri where adventure sports and corporate getaways will be held in their reassembled 300 year Wooden Kerela homes and other facilities. At the eco village in Bhivri hills, farm plots are being developed as well.

Did you know the difference?

Paneer and Halloumi vary in flavour and texture but have a similar significant role in the cultural history and cuisines of the countries where they originated.

Both can be used differently in dishes. Our Cow milk halloumi can be grilled for wraps, vegetarian kebabs, tacos, or burgers. Whereas, our paneer available in both Cow and Buffalo milk can be used to make parathas, curries, and can be cooked with vegetables.

Save this recipe for an easy go-to pizza dough and a rich and creamy pesto.

Recipe
Ingredients

120g flour
90ml water
4 grams instant dry yeast
2 teaspoons sugar
1 teaspoon olive oil
Pinch of salt

Pesto:
2 cups basil leaves
1 cup spinach leaves
½ cup pistachios
⅓ cup Indi-parm
½ cup extra virgin olive oil
6-7 cloves of garlic
2 chillies (optional)
1 tablespoon honey
Pinch of black pepper
Salt to taste

Dough:

Add lukewarm water and sugar in your mixing bowl, add the yeast and let it bloom for ten minutes. Once the yeast looks fluffy, add the flour, salt and olive oil to the bowl and mix with a wooden spoon till it comes together.

Flour your surface to start kneading, if your dough is too wet add some flour and knead right the dough stops being sticky and springs back when poked. Leave it to proof in an oiled container.

Pistachio Pesto:

Add your basil, spinach, pistachios, garlic, chillies, olive oil, honey, and indi-parm into a blender (blend pistachios separately to avoid large chunks).

Assemble:

Punch your dough once it doubles in size, start stretching it to shape it into a pizza. Spread an even layer of the pesto leaving the crust.

Add your sliced ABC Farms Buffalo Mozzarella on the pizza and bake. In the meantime prep the rest of your toppings.

For this pizza, we used procuitto, indi-parm, and fresh basil. Once your pizza is out of the oven add the rest of your toppings and enjoy!
