We celebrated the first day of our RANG SAPTAH with the colour GREEN .
We included methi ( fenugreek), coriander, avla, green garlic , green chillies , spinach , mint , avacado, green apples, green bell pepper, cucumbers and Brocoli in our meals

Curry leaves soup
Coarsely grind 1 small onion , 3-4 garlic , a spoon of jeera , 3-4 peppercorns in a mortar .
Heat a spoon of oil in a pan cooker , add the ground mixture and saute gently. Then add washed curry leaves (1 large bowl) and stir over low flame . Add 2 tablespoons of washed moong dal and saute. Add a cup of water and cook for 2 whistles. Once cool , muddle the curry leaves , add some more water and bring to boil. Strain add salt, pepper and lime juice . Garnish with fresh coriander . Your immune booster bowl of soup is ready.

Methi malai matar
What is a recipe with malai doing on a health page ? Well if our cheese cake can be cheese free ,custard can be sugar free then our MMM can be malai free
Read on.
Steam for 10 minutes in a steamer (steaming is the healthiest cooking process, retains maximum nutrients)
2 cups of tender methi leaves
1 cup green peas
5-6 cashews
2 green chillies
1 tbsp pumpkin seeds
1 medium sized onion ,sliced
Once done , other than the peas and methi ,grind the other ingredients into a fine paste .
In a pan heat 1 spoon oil, add jeera, 1-2 red chillies,a small cinnamon stick , few peppercorns and add the paste. Stir for a minute. Add the methi and peas and saute. Add salt and finish with a cup of fresh first coconut milk. Adjust sweetness as per taste with a spoon of sugar. Rub in kasoori methi on the palm of your hands and add. Mix ,cover and simmer for a minute.
Methi leaves if tender need not be chopped after steaming.

Here's another unconventional chutney - Watermelon rind chutney - yes you read it right - watermelon rind !!
2 cups of watermelon rind cut into cubes ( peel the outer green and take the white - a thin layer of red is fine )
1/4 cup cubes of raw mango , peeled - quantity adjusted as per sourness of raw mango
2-3 green chilles
A small bunch of coriander.
Grind all these coarsely
In a pan heat a tea spoon oil. Add mustard seeds, curry leaves , 1/2 tsp urad dal, 1tsp chana dal, finely chopped ginger -1 tsp, red chillies , pinch of hing and 1/2 tsp jeera . Saute till dals turn golden brown . Add the coarsely ground mixture and saute on medium high flame till reduced . Add salt as per taste .
Fibre rich , micronutrient rich - this immune booster is sure to be a hit !

Idli -sambhar - chutney is a complete meal , it has just the right proportion of proteins , carbs and healthy fats. We bring you an intersting fortified idli - kanchipuram idli .
3 parts moong dal
1 part urad dal
Wash and soak for 4-5 hours.
Grind the dals ( not too fine) add to it 1 part idli rawa adjust consistency ( neither runny nor thick ). Let this ferment for 4-5 hours
Heat 2 spoons oil, add mustard seeds and let it splutter, then add curry leaves , finely chopped green chillies, grated ginger, soaked chana dal or roasted peanuts and saute for a few minutes . Add broken cashew , raisins and hing.
Add this tempering to the batter.
Boil corn , green peas, chopped carrots in very little water for 5-7 minutes and add the veggies to batter. Finally add salt . Mix and batter is ready for steaming idlis.
Note-
moong dal ferments much faster than normal idli batter so leaving it overnight may make it sour

Since this is dal based idli , I skipped the sambhar ( lesser utensils to wash !!) and served with coconut chutney.

No coconut, no coriander , no worries !!
Here's a tangy ginger chutney - to perfectly accompany any dosa . My family relished it with moong cheela . Interestingly added a bit to the otherwise bland "gavar " or cluster beans and it was a super hit !
So here's your immune booster ginger chutney
Roast 2 tbs chana dal , 1 tbs urad dal , 2 inch ginger sliced , 5-7 red chillies in a tea spoon of oil until dal turns light brown and ginger pieces dry up. Once cool, grind it along with a tbs of jaggery powder , a tbs of tamarind paste and salt. Temper with cumin and curry leaves .
