Why did traditional kitchens value sprouted grains?

Sprouting is more than a preparation method - it changes the grain itself.

When millets are sprouted, natural enzymes activate within the seed. Research on germinated grains shows that this process can reduce anti-nutrients like phytates, improve mineral availability, increase certain B vitamins, enhance protein digestibility, and boost antioxidant activity.
