Manuel ólst upp í dreifbýli Kúbu þar sem foreldrar hans gerjuðu hefðbundna drykki úr hráefnum sem er að finna í þeirra nánasta umhverfi, s.s. Ragna ólst upp í Reykjavík en yfir sumartímann bjó hún fyrir vestan í sveitinni. Ragna hefur ástríðu fyrir heilbrigðu líferni og finnst mikilvægt að láta gott af sér leiða, bæði fyrir samfélagið og náttúruna. Manuel flutti til Íslands árið 2006. Áhugi hans f

rá bernskuárunum á gerjun varð til þess að hann aflaði sér frekari vitneskju um það flókna ferli sem fer í gang við gerjun og fór fljótlega að gera tilraunir með eigin formúlur og bjó til sínar eigin uppskriftir. Eftir að hafa aflað sér upplýsinga um hráefni til bruggunar rakst hann á forna aðferð við að gerja te - Kombucha. Manuel og Ragna urðu upprifinn yfir þjóðsögunni og vísindunum á bak við Kombucha og fóru fljótlega að drekka hann daglega. Manuel fann að drykkurinn hafði jákvæð áhrif á líðan hans, m.a. á magaflóruna. Manuel þakkar það Kombucha að hann náði að ljúka doktorsnámi sínu. Hann áttaði sig á sérstöðu drykkjarins og langaði til að deila upplifun sinni með sem flestum. Þetta er sagan af því hvernig fyrsta íslenska Kombucha brugghúsið varð til. Góður drykkur, gott líf, skál!

Kombucha Iceland is the brainchild of husband and wife team, Manuel and Ragna. Manuel grew up in rural Cuba, where his parents fermented traditional beverages from local ingredients like rice and wild plums. Ragna grew up in Reykjavík but during the summer (3 months) she went to the country side in Iceland. Ragna has a passion for a healthy lifestyle and thinks it is important to contribute something good to the society and nature. Manuel moved to Iceland in 2006. He found the complex processes involved in fermentation so fascinating that he threw out his recipe books and began experimenting with his own formulas. While searching for new ingredients to brew with, he came across the ancient practice of fermenting tea to make Kombucha. Intrigued by both the folklore and the science behind Kombucha, Manuel began to drink it to energize and sustain himself through his rigorous study sessions - and it worked! After graduation, he knew the drink was something extraordinary that he wanted to share with others. Iceland's first commercial Kombucha brewery was created. Good drink, good life.

Kombucha is a naturally fermented tea drink with a refreshing tang and gentle fizz.
It’s made by fermenting tea with organic cane sugar and a SCOBY (a culture of friendly yeast & bacteria).
The result is a living beverage full of character — slightly tart, a little sweet, and endlessly drinkable.

Today, Iceland celebrates Bóndadagur — “Farmers Day,”
It comes from the old Norse calendar and marks the first day of the winter month Þorri, traditionally in late January. Þorri itself was personified as a male spirit or seasonal figure, so the first day of his month became a day to honor the “bondi” — the farmer/household man.

So, today we appreciate the men in our lives.

This milestone almost slipped by without celebration, simply because we’ve been busy focusing on what we love most: brewing, creating, and growing.

But it feels important to pause and reflect:
