Ingredients for 2:
6 calamari tubes (cleaned and ready to use)
20-30 capers (Asaro) - rinse of the excess of salt before cooking
30 ml (1 fl. oz. - ( 2tbsp) Spicy Chili Oil
30 ml (1 fl. oz. - ( 2tbsp) Olio Nuovo EVOO Asaro
1 clove of garlic
6 sun-dried tomatoes
Lemon zest
Parsley
Instructions:
Prep the calamari, cut them in small rings
Blanch the sun-dried tomatoes in hot water for 3 minutes then cut them lengthwise in small strips
In a pan saute the garlic (cut it in a half) with the spicy EVOO for a couple of minutes without burning it. Remove the garlic from the pan.
Add the calamari and the capers and cook thoroughly for 3-4 minutes
Off the fire add the sun-dried tomatoes and mix quickly along with the EVOO.
Plate and grate some lemon zest over it and finish with fresh parsley.
