When the cake becomes part of the setting. 💙💛

For Miss Alice’s birthday celebration at the incredible Villa Cetinale in Tuscany, I created a bespoke cake inspired by the wonderful world of Mrs. Alice.

The cake featured blue pleating inspired by Miss Alice’s lampshades, with alternating blue and yellow tiers creating a playful, thoughtful pattern. I finished the design with intricate Lambeth-style piping, while the background featured one of Mrs. Alice’s beautiful prints, adding another layer of her distinctive style.

This is what makes cake design so exciting for me: taking the colours, textures, and personality of an event and turning them into something completely edible.

A celebration this beautiful deserves a cake to match.

There was a point in my career when I made a very conscious decision:
I would stop making cakes simply because someone wanted to buy one.
I wanted to make cakes for people whose stories moved me.
People I admired.
People whose celebrations meant something.
It was a difficult decision to make, and it hasn't always been the easiest road to walk.
But every now and then, someone comes along who reminds me exactly why I made that choice.
When she asked me to create her birthday cake, I instantly knew I wanted to make it.
She is strength and grace.
Resilience and freedom.
A woman with a fierce spirit and a deep love of living.
And I wanted the cake to embody that.
So we created something unapologetic.
Crimson red. Dramatic. Bold. Impossible to ignore.
The wafer paper sails seem to break free from the cake itself, as though they couldn't possibly be contained.

I wanted the cake to shout:
I am here.
I am alive.
I am free.
And I am loving my life.

Some cakes are beautiful.
Some cakes become part of a story.
And every once in a while, you get to create a cake that feels like a declaration.

This was one of those cakes.
But as incredible as this cake was, the woman it was created for was even more so. ❤️

We’re finally at our little mid-season break, and I’m taking the opportunity to catch up on sharing some of the incredible cakes I’ve been creating over the past few months for unforgettable destination weddings in Italy.
These little mini Davids were one of my absolute favourites. Each one was individually covered in white chocolate and filled with layers of silky panna cotta mousse, raspberry coulis and delicate vanilla cake.
Tiny works of art, with a very Italian soul.
And yes… they were every bit as delicious as they looked.

This was such a fun cake to create for a bride who really wanted something different.
She wanted something more sculptural and she loved the idea of bringing the roses from the gardens at Villa Medici di Lilliano into the cake.
So we decided to make the top tier into a rose, not a sugar flower sitting on top, but an actual tier of cake, sculpted and covered in sugar to look like a rose that was just about to open.
The two tiers underneath were kept quite simple, with delicate sugar flowers and foliage winding their way around the cake.
I really loved making this one. I think sometimes the most interesting cakes come from taking one idea and pushing it a little further. In this case, making the flower itself part of the cake.
And seeing it surrounded by all those candles, flowers and the beautiful gardens at Villa Medici di Lilliano was pretty special.
