The "Berti" bakery started in 1896 when Luigi Ferretti, the great grandfather of Stefania, started a fresh pasta workshop. Gabriele

Ferretti continued the tradition building the business with his sons, Luigi, Maria and Roberto, and beginning the bakery by installing a large baker's oven. The family has strong affection for the US because it was the Marshall plan that helped them buy the flour they needed to bake the bread for their community following the war and into the Second World War. In 1955 a new oven was built according to the latest technologies of that period. In 1988, Stefania together with her husband Marcello, took over the family business and continues with it today.

Enjoying a pandolce is like eating a giant cookie due to its dense and crumbly texture. Hailing from Genoa, the sweet bread is said to represent the “richness” of the city. Legend says it was invented when Doge Andrea Doria launched a contest for local bakers to engineer a cake that was nutritious, long-lasting for voyages at sea, and that represented Genoa's power. Thus, pandolce was born.

We carry five flavors from producer Pasticceria Berti. The classic is studded with candied fruits, raisins and pine nuts, and topped with candied cherry. The other varieties include delectable combinations such as orange walnut, fig walnut, chocolate pistachio, and chocolate hazelnut.
