Hamada has own plum farm, so they use their original plum only.
Also, they use only fully ripen plums.

It could make a very special plum liqueur.

They have 4 kinds of Umeshu flavor, normal, Yuzu, Sweet potato, and herb.

Products: Sake (rice wine), Umeshu (plum wine) etc.

The brewery is one of the oldest breweries in Saijo, Hiroshima.

Saijo is called ‘a Sake town’ by local people, because there are a lot of Sake breweries in this area. Hakubotan means White Peony.

Their sake has elegant flavor like a white peony.
So, people started to call this sake Hakubotan.

Do you know Mr. Natsume Soseki(夏目 漱石),a famous novelist?
He and another famous Japanese novelists and artists loved this Sake very well .

Echigo Beer Brewery was established in 1994 as the first company to brew a craft beer in Japan.

They were awarded their first prize - a Bronze prize at the World Beer Cup (Stout) in 1996. 4 years later they received their first Gold prize at Monde Selection in 2000 (Stout, Belgian style White) and the same year got a Gold prize at Millenium Competition in UK (Imperial Porter).

In 2009, again rewarded by a Gold prize at Monde Selection (Pilsner, Koshihikari Echigo Beer).

Products: Sake (rice wine), Doburoku (unrefined sake), Amasake (sweet fermente d rice drink), Umeshu (plum wine), Shochu (distrilled spirit) etc.

Senjo named after a nearby mountain Senjo Ga Take(仙丈ケ岳), with a 3,000 met er peak in the Japan Alps.

Their leading brand, Kuromatsu, was named after the founder: Mr. MATSUjirou KUROgouchi and since its introduction in the 1960's has grown to the
No.1 Sake choice for people in Nagano as well as neighboring regions.

They also make Doburoku and Amasake. Doburoku is an unrefined sake. It is sweeter than normal sake. And Amasake is a kind of rice drink (no alcohol).
It has a lot of good effects 'Create beautiful skin' 'Nutritianal support'

Do you know the Sake is made from “Sake Rice” different from “Table Rice”? There are 5 important points when the brewery chooses Rice for Sake.

1.Large grain size
2.Has Shinpaku心白
*It is the white and opaque part at the center of the rice.
3.Lower levels of lipids and proteins
4.High water absorption late
5.Outside is hard, inside is soft.

The kinds of famous Sake Rice are
・Yamadanishiki山田錦 *most famous!
・Gohyakumangoku五百万石
・Miyamanishiki美山錦
・Omachi雄町

There are also a lot of Local rice... Almost 100 kinds!
Ginpu(Hokkaido)/Hitogokochi(Nagano)/Yumesansui(Aichi)/Dewanosato(Yamagata) etc

But for your information, some table rice also can make good Sake.

This brewery is located in the southern west part of Toyama Prefecture.
Gokayama is a land of steep mountains and deep valleys. It is a heavy snowfall area, with an accumulation over 2 meters.
It was known in the old days as an unexplored region.
The settlements, renowned for their historic villages at Shirakawago and Gokayama areas and strongly retaining the traditional way of life, was registered in the UNESCO World Heritage List in 1995.

They make wine from grapes grown only in Japan. This type of brewery is rare. They have own vineyard in Tsurunuma, total 447 ha.

They buy grapes from contracted farmers.

They consume about 2,500 tons grapes annually and this volume reaches to a quarter of total production in Hokkaido.

Especially, their white wines are very fruity and floral. We recommend this women and wine beginners.

We visited Orihara Shoten that is located near Monzen-nakacho(門前仲町) station. This is not only a Sake shop but also a place for drinking Sakes at a low price. There are also some small dishes which are good match with Sakes. Oden was really delicious!

Do you know what do we call this style of Sake shop?

This is called Kakuuchi(角打ち) in Japan. Long time ago, some people started drink Sake in a Sake shop with Masu. Masu is a square Sake cup, and Kaku(角) means corner. So, they drink from the corner of Masu in the Sake shop… That’s why we call that Kakuuchi.

There are Japanese small snacks, too. We call them Dagashi(駄菓子). These are so cheap and keep the same style for a long time.

Sake’s information No.2

Sake is one of a Fermented Beverages like wine and beer. It is made from rice, water, rice koji, and yeast. In some cases, add distilled alcohol.

Adding distilled alcohol is not only for cutting material cost, it makes Sake fruity and mild.

Also, Sake is produced by the unique fermentation process, called Multiple Parallel Fermentation that utilizes microorganism such as yeast and koji mold.
First, koji mold change Rice starch into Glucose. Second, yeast change Glucose into alcohol.
