Foccacia Bread

Ingredients
*1 tablespoon honey
*2 cups warm water
*1 tablespoon active dry yeast
*1 tablespoon kosher salt
*1 tablespoon extra-virgin olive oil
*1/2 cup diced onion
*5 cups all-purpose flour, or as needed
*3 tablespoons extra-virgin olive oil
*2 tablespoons fresh chopped rosemary
*1/4 cup freshly grated Parmesan cheese
*1 tablespoon kosher salt

Add all ingredients to list

1.Dissolve honey in the warm water in a large bowl, then sprinkle yeast over the top. Let stand for 5 minutes until the yeast softens and begins to foam. Stir in 1 tablespoon of salt, 1 tablespoon olive oil, onions, and 5 cups of flour until the dough comes together. Knead on a well floured surface until smooth and elastic, about 5 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 20 minutes.

2.Preheat oven to 415 degrees F (215 degrees C).

3.Place dough onto oiled baking sheet, and flatten to cover the whole sheet evenly. Use the tips of your fingers to make indentations all over the dough spaced about 1 inch apart. Drizzle the focaccia with 3 tablespoons olive oil, then sprinkle rosemary, Parmesan cheese, and remaining 1 tablespoon of kosher salt over the top. Let rise for 10 minutes

4.Bake in preheated oven 20 minutes until golden brown.

Spinach Enchiladas; will enjoy if you love spinach and Mexican food; do try one and let us know.

Ingredients
*1 tablespoon butter
*1/2 cup sliced green onions
*2 cloves garlic, minced
*1 (10 ounce) package frozen chopped spinach , thawed, drained and squeezed dry
*1 cup ricotta cheese
*1/2 cup sour cream
*2 cups shredded Monterey Jack cheese
*10 (6 inch) corn tortillas
*1 (19 ounce) can enchilada sauce

Add all ingredients to list

Directions

1.Preheat the oven to 375 degrees F (190 degrees C).

2.Melt butter in a saucepan over medium heat. Add garlic and onion; cook for a few minutes until fragrant, but not brown. Stir in spinach, and cook for about 5 more minutes. Remove from the heat, and mix in ricotta cheese, sour cream, and 1 cup of Monterey Jack cheese.

3.In a skillet over medium heat, warm tortillas one at a time until flexible, about 15 seconds. Spoon about 1/4 cup of the spinach mixture onto the center of each tortilla. Roll up, and place seam side down in a 9x13 inch baking dish. Pour enchilada sauce over the top, and sprinkle with the remaining cup of Monterey Jack.

4.Bake for 15 to 20 minutes in the preheated oven, until sauce is bubbling and cheese is lightly browned at the edges.

Quick Chicken Nuggets; ONCCE TRY AT HOME AND PLZ DO COMMENT ON ITS TASTE.

Ingredients
*1 cup bread crumbs
*1/2 teaspoon garlic powder
*1/2 teaspoon dried thyme
*1/4 cup Dijon mustard
*1/3 cup light mayonnaise
*1 1/2 pounds chicken tenders, cut into 1-inch pieces
*3/4 pound green beans, washed, trimmed and steamed

Add all ingredients to list

Directions

1.Heat oven to broil. Coat baking rack with nonstick cooking spray. Place rack over baking sheet; set aside.

2.Stir together bread crumbs, garlic powder and thyme in a pie plate; set aside. Stir together mustard and mayonnaise.

3. Reserve about 1/2 cup of mustard mixture for dipping sauce. Brush chicken pieces with remaining mustard mix; place chicken in pie plate with bread crumb mixture, spooning crumbs on top of pieces and pressing to adhere. Transfer to prepared baking rack. Broil for 10 minutes or until cooked through.

4.Serve with reserved dipping sauce and green beans on the side.

Chicken Cacciatore; yummy and easy recipe

Ingredients
*2 tablespoons olive oil
*6 boneless, skinless chicken thighs - fat trimmed
*1 onion, chopped 1 (8 ounce) package sliced fresh mushrooms *2 cloves garlic, minced
*1 (28 ounce) can diced tomatoes with juice
*1 cup dry white wine
*1/2 cup orange juice
*2 tablespoons dried rosemary, or to taste
*salt and ground black pepper to taste

Add all ingredients to list

Directions

1.Heat olive oil in a skillet over medium heat, and brown the chicken thighs in the hot oil, about 5 minutes per side. Set the chicken aside.

2.In the same skillet, cook and stir the onion and mushrooms until the mushrooms have softened, about 10 minutes. Mix in the garlic, and cook until fragrant, 1 to 2 more minutes.

3.Pour in the tomatoes with their juice, white wine, orange juice, rosemary, salt, and black pepper, and stir until thoroughly combined.

4.Stir in the chicken pieces and any accumulated juices, cover the skillet, and bring to a boil. Reduce heat to medium-low, and simmer until the chicken is tender and no longer pink inside, 30 to 40 minutes.

Gouda and Spinach Stuffed Pork Chops

Ingredients
*4 (6 ounce) thick cut pork chops
*8 slices smoked Gouda cheese
*1/2 pound fresh spinach, rinsed and torn into bite-size pieces
*3 tablespoons horseradish mustard
*1 cup panko crumbs or breadcrumbs
*Creole-style seasoning to taste
Add all ingredients to list

Directions
1.Preheat the oven to 400 degrees F (200 degrees C). Coat a 9x13 inch baking dish with cooking spray.

2.Lay each chop flat on cutting board, and with a sharp knife held parallel to the board, cut a pocket into the pork, leaving three sides intact. Stuff each chop with spinach, and then with cheese.

3.Place panko crumbs in a shallow dish. Coat each chop with a thin layer of horseradish, and then roll in crumbs. Arrange chops in prepared baking dish. Sprinkle with Creole seasoning to taste.

4.Bake in preheated oven for 45 minutes, or until brown and crispy.

Stuffed Bell Peppers

Ingredients
*1/2 cup cooked rice
*2 tablespoons olive oil, divided
*1/8 cup minced carrots
*1/8 cup celery 6 bell peppers (any color) stems and seeds removed, cut in half lengthwise
*1/2 pound ground beef
*1/4 pound pancetta or lightly smoked bacon, diced
*1 1/2 cups prepared marinara sauce
*1/4 cup red wine
*1/2 teaspoon red pepper flakes
*1/3 cup heavy cream
*1/2 cup grated Parmesan cheese, divided

Add all ingredients to list

Directions
1.Preheat oven to 375 degrees F (190 degrees C).

2.Heat 1 tablespoon olive oil in a skillet over medium heat. Stir in the carrots and celery; cook and stir until the vegetables are tender, about 5 minutes.

3.Stir in ground beef and pancetta, and cook until browned and crumbled; drain off any excess liquid, and return to heat. Add marinara sauce, wine, and red pepper flakes, and simmer for 10 minutes. Stir in cream, half of the Parmesan cheese, and rice. Simmer 5 minutes more, or until most liquid has absorbed.

4.Place peppers in a shallow baking dish, and fill with beef mixture. Drizzle with remaining olive oil and top with remaining Parmesan cheese.

5.Bake, uncovered, for 30 minutes in the preheated oven. Serve hot.

Garlic Chicken

Ingredients
*1/4 cup olive oil
*2 cloves garlic, crushed
*1/4 cup Italian-seasoned bread crumbs
*1/4 cup grated Parmesan cheese
*4 skinless, boneless chicken breast halves

Add all ingredients to list

Directions
1.Preheat oven to 425 degrees F (220 degrees C).

2.Heat olive oil and garlic in a small saucepan over low heat until warmed, 1 to 2 minutes. Transfer garlic and oil to a shallow bowl.

3.Combine bread crumbs and Parmesan cheese in a separate shallow bowl.

4.Dip chicken breasts in the olive oil-garlic mixture using tongs; transfer to bread crumb mixture and turn to evenly coat. Transfer coated chicken to a shallow baking dish.

5.Bake in the preheated oven until no longer pink and juices run clear, 30 to 35 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F.

Banana Crumb Muffins
Ingredients
**1 1/2 cups all-purpose flour
**1 teaspoon baking soda
**1 teaspoon baking powder
**1/2 teaspoon salt
**3 bananas, mashed
**3/4 cup white sugar
**1 egg, lightly beaten
**1/3 cup butter, melted
**1/3 cup packed brown sugar
**2 tablespoons all-purpose flour
**1/8 teaspoon ground cinnamon
**1 tablespoon butter

Add all ingredients to list

1.Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.

2.In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.

3.In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.

4.Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

Meatballs

Ingredients
*1/2 pounds ground beef/ ground chicken
*1 1/4 cups Italian seasoned bread crumbs
*1/4 cup chopped fresh parsley
*2 cloves garlic, minced 1 medium yellow onion, chopp
*1 egg, beaten 1 (28 ounce) jar spaghetti sauce
*1 can crushed tomatoes
*1 can tomato puree

Add all ingredients to list
Directions

1.Heat oven to 400°F. Line 13x9-inch pan with foil; spray with cooking spray.

2.In large bowl, mix all ingredients. Shape mixture into 20 to 24 (1 1/2-inch) meatballs. Place 1 inch apart in pan.

3.Bake uncovered 18 to 22 minutes or until no longer pink in center.

Chicken Drumsticks

Ingredients
*6 chicken drumsticks
*1/2 cup water
*1/3 cup ketchup
*1/3 cup white vinegar
*1/4 cup brown sugar
*4 teaspoons butter
*2 teaspoons salt
*2 teaspoons Worcestershire sauce, or to taste
*2 teaspoons dry mustard
*2 teaspoons chili powder, or to taste

Add all ingredients to list

Directions
1.Preheat oven to 400 degrees F (200 degrees C). Place drumsticks in a baking dish.

2.Whisk water, ketchup, vinegar, brown sugar, butter, salt, Worcestershire sauce, mustard, and chili powder together in a bowl; pour mixture over drumsticks. Cover with aluminum foil.

3.Bake in preheated oven until no longer pink at the bone and the juices run clear, about 1 hour, turning chicken about halfway through. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

1.Stir water and salt together in a bowl. Gradually stir corn meal into water with your fingers until mixture forms a soft, moist, malleable dough.

2.Divide dough into 8 golf ball-size balls and pat each one into a patty about 3/8-inch thick.

3.Heat oil in a skillet over medium heat until shimmering. Working in batches, cook corn patties in hot oil until golden brown, 4 to 5 minutes per side. Transfer cooked arepas to a paper towel-lined plate to drain until cool enough to handle.

4.Slice halfway through each cake horizontally with a thin serrated knife to form a pita-like pocket.

# In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.

# Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
