Olive oil is considered the most beneficial to human health in comparison with other vegetable oils as it is the oil that is called virgin, meaning that it was not subjected to any chemical treatment during its extraction from the fruits of olives and therefore it is the only vegetable oil that is extracted from fruits and not from seeds.
The benefits of olive oil are due to its chemical composition in terms of its fatty acid content, especially oleic acid, which is called the friend of the heart and protects the oil from oxidation during frying, in addition to its high content of antioxidants such as polyphenols and squalene, some sterols and vitamins such as vitamins E and K and plant pigments such as chlorophyll which It is considered to protect the human body from heart disease and cancer. There are many factors that affect the percentage of these substances in olive oil, which we review as follows: -
First: - the type
There are big differences between one class and another in its content of the substances mentioned above, which determine the usefulness of the oil
Second: - Chemical specifications
And here we mean the degree of acidity and peroxide, the higher they are, the less the benefits of the oil.
Third: - Agricultural transactions
Such as irrigation, where the benefits of oil in irrigated agriculture are less if the irrigation process is not controlled and stopped two weeks before harvesting. It was also found that the olives that were plowed give an oil of greater benefit. With regard to chemical fertilization, it was found that increasing the nitrogen element reduces the benefits of oil, and it was also found that organic fertilization is better than chemical fertilization in affecting the benefits of oil. Some diseases affect the benefits of oil, for example, it was found that having peacock eye disease increases the benefits of the oil, as its content of antioxidant polyphenols increases because it is the immune system of the tree.
