This is how we celebrate every 15th of May — San Isidro Labrador, the patron saint of Estepona’s countryside, farmers and all those who work the land. 👨‍🌾🌾

Since having our own olive grove in Andalucía, this day has taken on a completely different meaning for us.

The olive grove has taught us to respect the rhythm of the seasons and to appreciate the incredible effort behind every drop of olive oil. 🫒🌿

Last Friday we celebrated all farmers, families and traditions that keep the countryside alive. 💚🤍💚

This morning I baked four loaves of sourdough bread: two for us and two for you. ❤️

Freshly baked and still warm. 😋😋😋

This is one of our favourite dinners. When I prepare it, it is always a special moment of the day. Enjoyed with a glass of Albariño white wine, it is simply fabulous. Try it. ✨💚✨🫒🥂❤️

1. Toast the bread

Heat a pan over medium heat. Toast the slices in the pan until golden and crisp on both sides. Pan-toasting gives better flavour than a toaster.

2. Season the toast

Once toasted, drizzle each slice lightly with Oro del Burgo extra virgin olive oil.

3. Spread the pesto

Spread a thin layer of homemade pesto over each slice.

4. Add mozzarella

Cut the buffalo mozzarella into bite-size pieces and place them on top of the pesto.

5. Add tomato

Slice or dice the tomatoes and add them alongside or on top of the mozzarella.

6. Finish

Drizzle lightly with more olive oil. Add a pinch of salt if needed. Serve immediately and enjoy! Ñammm!!! 😋😋😋

Lately this has become our favorite side dish: simple, very healthy and perfect with chicken or fish.

Low in calories, high in fiber and ideal for shedding a bit of the weight gained over the holidays.

Ingredients:
Padrón peppers
Broccoli
Sweet potato

How I prepare it:
I peel and chop the sweet potato, wash the Padrón peppers and cut the broccoli into small florets.
Everything goes onto a baking tray, sprinkled with coarse salt and drizzled with extra virgin olive oil.

Bake for 40 minutes at 180 °C covering with aluminium foil for the first 20 minutes, then uncover to finish.

Absolutely delicious. Ñam. 😋
