Winter is made for slow-cooked comfort food, and few cuts do it better than ossobuco.

Cut from the shank, ossobuco is packed with connective tissue and collagen that slowly melts during cooking, creating meat that's incredibly tender and a rich, silky sauce that's full of flavour. Even better, the marrow in the centre of the bone adds incredible depth and richness that takes stews, casseroles, and potjies to the next level.

Here are a few tips to get the best out of ossobuco:

• Low and slow is best. Give it time to braise for 2½-3 hours until the meat falls off the bone.
• Brown the meat first to build a deeper, richer flavour.
• Cook it with onions, garlic, carrots, tomatoes, herbs, and stock for a hearty winter meal - or even better, make a Potjie!
• Don't skip the marrow - it's considered one of the most flavourful parts of the dish and is perfect spread over fresh bread.

Meet The Cuts: Part Three: Ribeye: Ribeye is often called the king of steaks, and for good reason.

Cut from the rib section, ribeye is naturally rich in marbling (those fine streaks of fat running through the meat). As it cooks, that marbling melts into the steak, creating incredible flavour, tenderness, and a juicy bite.

Here are a few tips to get the most out of your ribeye:

• Bring it to room temperature for 20-30 minutes before cooking for more even results.
• Season simply with salt and pepper to let the natural flavour shine.
• Cook over high heat to develop a beautiful crust while keeping the inside tender.
• Let it rest for 5-10 minutes after cooking so the juices stay in the meat, not on your plate.

Meet The Cuts: Part Two: Beef Ribs:

Beef ribs have a rich beefy flavour.

Beef ribs have plenty of marbling and connective tissue, which breaks down during slow cooking to create incredibly tender, juicy meat.

Low and slow is the secret – It doesn't matter if you're smoking, braising, or slow-roasting them; patience pays off, we promise. Cooking them too quickly will leave them tough, and you do not want that.

Internal temperature is important – For fall-off-the-bone tenderness, aim for an internal temperature of around 93–96°C. That's when the collagen has had time to fully break down.

Once they're cooked, let the ribs rest for 15–20 minutes before serving. This helps lock in the juices.

A generous coating of salt, pepper, and garlic is often all you need. Great-quality beef doesn't need to be hidden behind heavy marinades.

If you're using a smoker, woods like oak or hickory complement the rich flavour without overpowering the meat.

Pro tip: Leave a thin layer of fat on the ribs while cooking. As it renders, it naturally bastes the meat, adding even more flavour and keeping it beautifully moist.
