Pollo en Pepitoria (Tradicional) – Cremoso, Aromático y Muy Castellano 🌰🍗✨
Ingredientes (para 4 personas generosas)

1 kg pollo troceado (mejor muslos, contramuslos y alitas con hueso y piel)
2 cdas aceite de oliva virgen extra
Sal fina al gusto
Pimienta negra recién molida al gusto
1 cebolla mediana (picada fina)
2 dientes de ajo (picados)
50 g almendra tostada (natural, sin piel)
1 rebanada de pan del día anterior (sin corteza)
2 yemas de huevo cocidas (duras)
200 ml caldo de pollo
120 ml vino blanco seco
Una pizca generosa de azafrán (opcional)

Preparación paso a paso

Dora el pollo
Salpimienta los trozos de pollo. Calienta una cazuela amplia con 2 cdas de AOVE a fuego medio-alto. Dora el pollo 3–4 minutos por lado hasta que quede bien dorado. Retira y reserva. Deja el fondo de la cazuela.
Pocha la cebolla y ajo
En la misma cazuela, baja el fuego y añade la cebolla y el ajo. Sofríe 8 minutos hasta que estén tiernos y ligeramente dorados.
Prepara la picada
