🍫 Chocolate Chip Overnight Oats:

Ingredients:
- old fashioned rolled oats
- unsweetened almond milk
- greek yogurt
- maple syrup / honey
- chia seeds
- a pinch of sea salt
- chocolate chips
- peanut butter

Overnight Oats Ratio

A 1:1 ratio of rolled oats to milk, plus half as much yogurt. So for 1 cup of oats, use 1 cup of milk + 1/2 cup of yogurt (or an additional 1/2 cup of milk). This seems to give the oats the perfect consistency, not too thick, but not soupy.

How Long Do Overnight Oats Need to Soak?

I recommend at least 8 hours for true overnight oats. You can actually make them in 2-4 hours if you’re in a rush. With this quick soak, they’re not as soft as overnight oats that have soaked longer and they’re a bit more liquidy, but they’re still delicious.

How Long Do Overnight Oats Last?

When stored in an airtight container in the fridge overnight oats should last for up to 5 days. They will soften more the longer they sit so I find they’re best on days 1-3, but they’re still safe to eat on days 4 and 5.

Original rolled oats are commonly referred to as regular or old-fashioned oats. They are the most common form of processed oats in the marketplace.

Original rolled oats are made from oat groats that have been steamed and rolled flat with the help of large rolling pins. Flattened or rolled oats expose a larger surface area which makes them cook much faster. 

The steaming process helps the oats to roll flat without cracking. In addition, the steam stabilizes the natural oils within the oats and further extends the shelf life of the grain.


A portion of original rolled oats can be soaked overnight or cooked in about 10 minutes. Original rolled oats are also used in a variety of preparation like bars, biscuits, breads, cookies, cakes, granolas and muffins.

Fast cooking rolled oats or quick oats are similar to original rolled oats, but the main difference is that they are rolled much thinner. The reduced thickness decreases the cooking time to just a few minutes, which makes them easier to prepare.



Both original rolled oats and fast cooking rolled oats follow the same production steps. However, the main difference is the thickness of the rolled or flattened oats.

Even though both types of oats are steamed first and then rolled, original rolled oats are noticeable thicker than fast cooking rolled oats. As a result, fast cooking rolled oats cook faster and are slightly mushier than original rolled oats.

🍙 Oats Ketupat With Shrimp Sambal Recipe

INGREDIENTS FOR KETUPAT:
~ 100g instant rolled oats
~ 150g rice
~ Ketupat wraps

INSTRUCTIONS FOR KETUPAT:
1. Mix rice with instant rolled oats. Fill up the ketupat wraps until half-full.
2. Boil water. Drop ketupat in and cook for 1 hour.
3. Once cooked, leave to drain.
4. Rest for at least 1 hour before serving.

INGREDIENTS FOR SHRIMP SAMBAL:
~ 30g dried shrimp soaked in hot water for 20 minutes
~ 50g instant rolled oats (ground)
~ 100g dried red chillies, cut to pieces, deseeded, and soaked in hot water for 20 minutes (drain before use)
~ 100g deseeded red chillies
~ 200g peeled shallots
~ 100g peeled garlic
~ 5 bird’s eye chillies
~ 2 tsp salt
~ 50g sugar
~ Cooking oil (as needed)

INSTRUCTIONS FOR SHRIMP SAMBAL:
1. Process or pound ingredients 1–7 until a smooth paste is formed. You can bind the ingredients with oil.
2. Heat oil on a pan and add sambal paste. Sauté for 10 minutes until the paste turns a deep red colour.
3. Add in grinded instant rolled oats, salt, and sugar.
4. Sauté constantly for another 20 minutes. The oil should separate from the chilli paste.
5. Serve with ketupat.

🎂 Pistachio Oats Cake Recipe

INGREDIENTS
~ 140g shelled pistachios
~ 152g light brown sugar
~ 113g cold butter (cut into small cubes)
~ 2 large eggs
~ 53g unsweetened vanilla almond milk (or milk of choice)
~ 1 teaspoon vanilla extract
~ 106g old-fashioned oats
~ 1/4 teaspoon baking powder
~ 1 teaspoon baking soda
~ 1/2 teaspoon fine sea salt
~ 1-1/2 tablespoons cornstarch

Optional Cream Cheese Frosting
~ 56g reduced-fat cream cheese (softened to room temperature)
~ 1/2 teaspoon vanilla extract
~ 1/8 teaspoon fine sea salt
~ 210g powdered sugar
~ 1 tablespoon unsweetened vanilla almond milk (or milk of choice)
~ Optional: additional chopped pistachios to top

INSTRUCTIONS:
1. PREP:
Preheat the oven to 325 degrees F (162 degrees C). Line an 8x8-inch baking pan with parchment paper and lightly grease with cooking spray. Set aside for now.

2. CAKE:
Add the shelled pistachios and brown sugar to a large powerful blender and blend until pistachios are broken down and incorporated with brown sugar (20-30 seconds). Add in the cubed butter and pulse to break down butter. Scrape sides of blender and add in both eggs, milk, and vanilla extract. Blend until smooth and creamy. Add in the oats, baking powder, baking soda, salt, and cornstarch. Blend until the batter is completely smooth, stopping and scraping down edges as needed, about 90 seconds.

3. BAKE:
Pour completely smooth batter into prepared baking pan using a spatula to scrape out every bit. Smooth the top with the spatula and bake for 37-43 minutes or until cake is lightly browned at edges and set in the middle (toothpick when inserted in the center should come out clean).

4. FROST:
Meanwhile, place softened cream cheese in a large bowl. (Give it ample time to set out so your frosting isn't chunky.) Using a hand mixer, beat the cream cheese with the vanilla and salt until smooth. Slowly add in the powdered sugar (beating in between additions) until smooth and creamy and to the desired consistency. Add milk and beat until smooth.

5. DECORATE:
Frost the completely cooled cake evenly with the frosting. If desired, top the frosting with chopped pistachios.

🥣 Easy Fast Cooking Oats Recipe

INGREDIENTS:
• 1 cup water or low-fat milk
• Pinch of salt
• ½ cup fast cooking oats
• 1 fluid ounce Low-fat milk for serving
• 1 to 2 teaspoons honey, cane sugar or brown sugar for serving
• 1 pinch of cinnamon

INSTRUCTIONS:
1. Using Stovetop:
Combine water (or milk) and salt in a small saucepan. Bring to a boil. Stir in oats and reduce heat to medium; cook for 1 minute. Remove from heat, cover and let stand for 2 to 3 minutes.

2. Using Microwave:
Combine water (or milk), salt and oats in a 2-cup microwave-safe bowl. Microwave on high for 1 ½ to 2 minutes. Stir before serving.

3. Serve with your favorite toppings, such as milk, sweetener, cinnamon, dried fruits and nuts.

Happy Valentine's Day ❤

🥞 How to make these easy flourless pancakes:

INGREDIENTS:
- 1 ½ cups rolled oats
- Nutmeg
- ½ teaspoon cinnamon
- 2 teaspoons baking powder
- ½ cup almond milk (or milk of your choice)
- 2 eggs

INSTRUCTIONS:
1. Add the rolled oats to a blender and blend till they resemble a flour-like consistency. Then spoon them into a bowl.
2. Also to the bowl, add in the baking powder, salt, cinnamon and nutmeg and mix with a spoon. Then add in the milk and eggs and mix till well incorporated. Set mixture aside for 8-10 minutes to thicken up.
3. While waiting, place a pan over a low-medium flame and let it warm.
4. When pancake mixture is thickened, grease pan with vegan butter and ladle 2-3 tablespoonfuls of mix onto pan, and cook 2-3 minutes on each side, till golden and that golden ring forms around the circumference of the pancake.
5. Serve these easy oatmeal pancakes with whipped cream, golden syrup or maple syrup or jam, and raspberries and enjoy!

🥄Blueberry Peanut Butter Overnight Oats:

INGREDIENTS:
• 1 cup rolled oats
• 2 unflavored protein powder (optional)
• 2 teaspoons maple syrup
• 1 1/2 cups unsweetened vanilla almond milk
• 2 teaspoons chia seeds
• 1 1/2 cups fresh blueberries
• 2 tablespoons creamy peanut butter plus more for topping

INSTRUCTIONS:
1. Start by whisking together the oats and protein powder in a medium-sized bowl.
2. Next, add in the maple syrup, milk, chia seeds and stir. Then add in 1/2 cup of the blueberries and stir again.
3. Grab your mason jar/ bowl and drizzle some peanut butter on the.
4. Take your oat mixture and scoop it into the jars.
5. Cover and refrigerate for a minimum of six hours.
6. In the morning, top with remaining blueberries, more peanut butter drizzle, chia seeds, nuts, or toppings of your choice.
