Rarity: Only about 5% to 6% of all wild salmon caught off the Hidaka coast meet the rigorous standards required to earn the "Ginsei" label.
Strict Grading: Certified fish must weigh at least 3.5 kg, display bright silver scales, and possess supreme freshness.
Traceability: Every approved fish is tracked with its own individual serial number tag.
