Posted • 2nd test recipe with today in the ! Made a batch of Keto Ham & Cheese Croquettes and these turned out way better than I had imagined.
The texture is soft and creamy like mashed potatoes though not as silky. I suspect this is coz my okara powder is quite coarse, so next time I might mill it again to get a finer mesh.
You can also be creative with the filling and use whatever stuff you have left in the fridge! I'm clearing random bits of Ham and cheese I have lying around 😂

Keto Okara Ham & Cheese Croquettes
• 30g Okara Powder ()
• 120g water or pea milk
• Minced Garlic
• Minced Onion
• Chopped Ham (I used 2 slices of sandwich ham)
• Chopped Cheese (I used 40g Gouda)
• 1 tbsp Worcestershire sauce
• 1/2 tbsp Mirin
• Seasoning (bone broth powder, salt and pepper)
• Beaten egg and Lupin Flakes for crumb coat
🫓 Mix okara powder with the liquid. You may need to add less water till you get a thick batter. Add in the dry ingredients and combine.
🫓 Roll into 10 balls, and leave in fridge to set for 30 minutes.
🫓 Coat in egg, then with lupin flakes
🫓 Air fry at 165°c for 25 mins
Yields: 10 balls. Macros per ball;.
