Grilling lamb shoulder using a magic pan (a double-sided grilling pan) is simple and can result in juicy, flavorful meat. Here’s an easy recipe for you:
Ingredients:
• 1 kg lamb shoulder (cut into steaks or thick slices)
• 4 garlic cloves (minced)
• 1 tablespoon fresh rosemary (chopped) or 1 teaspoon dried rosemary
• 1 tablespoon fresh thyme (chopped) or 1 teaspoon dried thyme
• 1 teaspoon ground cumin
• 1 teaspoon smoked paprika
• 1 teaspoon black pepper
• 1 teaspoon salt
• 2 tablespoons olive oil
• Juice of 1 lemon
Instructions:
1. Prepare the Marinade:
In a bowl, mix the garlic, rosemary, thyme, cumin, paprika, pepper, salt, olive oil, and lemon juice to create a marinade.
2. Marinate the Lamb:
Rub the lamb shoulder steaks with the marinade, ensuring all sides are well coated. Let it sit for at least 30 minutes (or up to 2 hours for more flavor).
3. Preheat the Magic Pan:
Heat the magic pan over medium heat for 2-3 minutes. No need to add extra oil since the lamb is already marinated with oil.
4. Grill the Lamb:
Place the marinated lamb shoulder in the magic pan and close it. Grill each side for about 7-10 minutes (depending on the thickness), flipping halfway through. Ensure both sides have a nice golden-brown sear.
5. Check Doneness:
The internal temperature should reach around 60°C (140°F) for medium-rare or 70°C (160°F) for well-done. Use a meat thermometer if available.
6. Rest the Meat:
Let the lamb rest for 5 minutes after removing it from the pan to allow the juices to redistribute.
7. Serve:
Slice and serve with your favorite sides like roasted vegetables or salad.
