πŸ‹ Recipe of the Week: Zesty Lemon Garlic Salmon Tray Bake 🐟

Fresh. Flavour-packed. Fuss-free. This healthy salmon tray bake is infused with bold lemon and garlic, grilled to perfection in just 11 minutes, and paired with parmesan asparagus and blistered cherry tomatoes. One tray. No mess. Big flavour.

πŸ›’ Ingredients

Salmon:
4 x 180g salmon fillets (skin on or off)
Lemon Garlic Marinade:
1 tsp lemon zest (from 1 lemon)
1 tbsp lemon juice
2 tbsp extra virgin olive oil
1 tsp Dijon mustard
2 garlic cloves, finely grated
Β½ tsp salt
ΒΌ tsp black pepper

Vegetables (optional but recommended):
3 bunches asparagus, trimmed
200g cherry tomatoes
2 tsp extra virgin olive oil
ΒΌ tsp salt
ΒΌ tsp black pepper

For Serving:
Olive oil spray
Finely grated parmesan
Lemon wedges
Fresh parsley, chopped
Crusty bread or toast

πŸ‘©β€πŸ³ Instructions

1️⃣ Prepare the Marinade
Mix lemon zest, lemon juice, olive oil, Dijon mustard, garlic, salt, and pepper in a small bowl. Slather generously over the top and sides of the salmon. If time allows, marinate for 1 hour (optional but recommended).

2️⃣ Preheat Oven
Preheat oven grill/broiler to 280Β°C (or as high as it goes). Position oven rack about 20cm from the heat source.

3️⃣ Prepare the Tray
Toss asparagus and cherry tomatoes with olive oil, salt, and pepper. Spread evenly on a large baking tray and make space for the salmon. Place salmon fillets on the tray, leaving a little space between each. Lightly spray salmon with olive oil.

4️⃣ Cook
Grill/broil for 11 minutes or until salmon flakes easily and reaches an internal temperature of 50Β°C.

5️⃣ Serve
Transfer to plates. Grate parmesan over the vegetables, squeeze fresh lemon over the salmon, and sprinkle with parsley. Serve with crusty bread and enjoy!

Looking for a simple and flavourful seafood idea? This garlic and herb pan-fried angel fish recipe is a great way to enjoy a light, delicious meal while celebrating the versatility of seafood.

Ingredients:
4 angel fish fillets (pin-boned)
Juice of 2 lemons (or Β±6 tbsp lemon juice)
4 garlic cloves (minced)
2 tsp dried thyme
2 tsp mixed herbs
Salt & pepper to taste
4 tbsp butter
4 tbsp olive oil

Method:
In a glass dish, combine lemon juice, garlic, herbs, salt, and pepper. Coat the fish fillets on both sides.
Cover and marinate in the fridge for about 30 minutes.
Heat butter and olive oil in a frying pan over high heat.
Add the fish, then reduce heat to medium.
Cook for 3–5 minutes per side, depending on fillet thickness.
Baste frequently with the melted butter and oil while cooking.
The fish is ready when it flakes easily with a fork.
