JOLLOF SPAGHETTI
INGREDIENTS
1) pack of spaghetti
2) Fresh tomatoes ( blended with pepper mix, onions ginger and garlic ( ginger and garlic is optional)
3) Tomatoes paste
4) medium size onions ( chopped)
5) bell pepper
6) scotch bonnet pepper ( atarodo)
7) green bell pepper π« ( sliced)
8. green beans
9) cooking vegetable oil
10) medium size carrots π₯ ( sliced )
11) curry
12) thyme
13) Seasoning cubes ( chicken preferable)
14) salt to taste
15) jollof signature spices
16) sweet corn ( optional)
METHOD
STEP 1
In a pot of bolling water, pour in your spaghetti strands and add some salt
STEP2 add some few drops of oil to the pot ( about 1_2 tablespoons)
Note:: this will help the strands to stay moist and separated
Cover and leave it to parboil for few minutes
STEP3 while the spaghetti is parboiling, you can start frying your sauce by pouring some oil in a pan , add your chopped onions π§
and allow it to sizzle for few seconds
Add your tomatoes paste and stir
STEP 4 while it is frying add some curry thyme and jollof spices now pour the fresh tomatoes and pepper mix leave to fry for few minutes
STEP 5 add your meat stock ( to those that donβt know what meat stock is, it is the water you used in cooking your meat) add little quantity and also it depend on the texture of your parboiled spaghetti, if it is half done, add more of the stock but if it over cooked, add just a little
And stir, now pour the spaghetti and stir to combine thoroughly.
Leave it to simmer a little
STEP 6 , add the veggies ( carrots , sweet corn greens)
Note: you can use more varieties of veggies if you like.
