This vibrant and versatile sauce is packed with fresh flavors and healthy fats, offering a creamy texture with a delightful hint of spice.

Yields: Approx. 2-2.5 cups
Prep time: 10 minutes

Ingredients:

2 ripe avocados, pitted and peeled
4 cloves garlic, peeled
1 cup fresh parsley leaves (packed)
1 cup fresh cilantro leaves (packed)
1/2 large green bell pepper, deseeded and roughly chopped
1/2 cup shelled pistachios (unsalted if possible)
2-3 spring onions (white and light green parts), roughly chopped
1/2 - 1 whole jalapeño, deseeded and roughly chopped (use less for milder spice, more for a stronger kick)
1/4 cup extra virgin olive oil (or more, to adjust consistency)
Juice of 2 large limes (about 1/4 - 1/2 cup)
1/2 teaspoon salt, or to taste
Optional: 1/4 cup cold water or vegetable broth (to thin for dressing/marinade)
Equipment:

Food processor or high-speed blender
Instructions:

Prepare the aromatics: In your food processor or blender, add the garlic, parsley, cilantro, green bell pepper, spring onions, and jalapeño. Pulse until finely chopped.
Add the creamy base: Add the ripe avocados, pistachios, lime juice, and salt to the mixture.
Blend and emulsify: With the food processor or blender running on low, slowly drizzle in the olive oil. Continue to blend until the sauce is creamy and smooth. Stop and scrape down the sides as needed to ensure everything is incorporated.
Adjust consistency and taste:
For a thicker dip or spread, you might not need to add any additional liquid.
For a dressing or marinade, gradually add the cold water or vegetable broth, blending until you reach your desired consistency.
