Drying is one of the oldest methods of food preservation in human history? But not all drying methods yield the same results.
Open sun drying has been used for centuries across Nigeria to preserve surplus crops like tomatoes, peppers, and grains. While it is highly accessible, it exposes food to dust, insects, erratic rainfall, and harmful UV rays that strip away vital nutrients and degrade quality.
Unlike open sun drying, solar dryers use the greenhouse effect. They capture and concentrate solar radiation inside an enclosed chamber. This creates a controlled environment where temperatures can reach up to 60 degrees Celsius, effectively removing moisture from the food while protecting it from external contamination.
Here is why this matters for food security:
First, it drastically reduces post-harvest losses by extending the shelf life of highly perishable goods from just a few days to several months.
Second, the controlled environment retains up to 80 percent of the food's nutritional value, specifically vitamins A and C, which are often destroyed by direct sunlight.
Third, it empowers rural communities by providing a low cost, sustainable way to process their harvest and sell it at premium prices when fresh produce is scarce.
Sustainable agriculture relies on practical innovations. Upgrading from open sun drying to enclosed solar technology is a critical step in building a more resilient and profitable food system.
