TIPS FOR BAKING RICH FRUIT CAKE:

*Soaking your fruits/raisins/nuts in alcohol gives it a rich taste.

* Coat your fruits in flour to prevent them from sinking while baking

*Use good Brandy for baking or dousing your cakes and also soaking your fruits.

* Use of quality spices like cinnamon, All spice, nutmeg enhances the taste and gives it that rich taste.

* Avoid overmixing the barter, fruit cake is a dense cake, it is nit from the fluffy cake family.

* Avoid baking your fruit cake on high heat, my mentor will always tell me Chioma, I bake my fruit cake on the lowest heat even if it takes the whole day to bake am ok.

* Ensure to douse your fruit cake with Brandy once it's out of oven or has cooled down a bit, helps to enhance the taste more and acts as a preserving agent.

* If you are going to age your fruit cake, make sure to feed it alcohol atleast once a week or in two weeks, carefully wrapped and kept in your fridge or freezer.

My Strawberry Cream Frosting Recipe

I used these Ingredients
👇
200g of
750g of Icing Sugar
75g of Strawberry jam
3 Tablespoons of Condensed milk
¼ cup of Liquid Milk
Few Drops or ¼ teaspoon of Pink food colouring (depending on the shade of pink you want to achieve)
1 teaspoon of Strawberry flavour
Water (optional)

Procedure
- Sift your Icing Sugar
- Cream , Condensed milk, Strawberry flavour and the Strawberry jam till mixture is very light and smooth
- Then gradually add the icing sugar gradually
- Afterwards add the pink food colouring and the Liquid milk
- Mix thoroughly till mixture is very smooth
- If mixture is too thick..you can add little water or more milk but if not thick...don't add the any extra water or milk

You can use this to frost your Cupcakes, cakes, and even use it for your cake or Pastry fillings.

How to make liquid soap

Caustic soda ( 2 table spoon only so that it will not peel off your hand)
Nitrosol
Soda ash
STPP
Laurel rice
Texapon
Sulphonic acid
Formalin ( 3 tablespoons only)
Foam blaster
Colour
Perfume

Procedure

I will give you method of 30 litres of liquid soap incase you want to sell it.
When you go to chemical shop you tell them to give measurement of. 30litres.

METHOD.
1) Mix caustic soda in 1 litre of water and stir it very well and set aside.

2) Mix soda ash in another bucket of water ( 3 litres) and stir very well to avoid lumps.

3) Mix STPP in another bucket of water ( 3 litres) and stir

4) Mix Laurel rice (SLS ) in another 3 litres of water and stir.

5) Mix Texapon and Sulphonic acid in another bucket until they are well dissolve. ( Please don't add water to this 2 Chemical please)

Leave all the mixture for 20 to 30 minutes for the chemical to dissolve properly.

6) Bring big plastic that will contain 30 litres of water and pour 19 litres of water and add nitrosol and stir it very well .

7) pour the contents in the buckets ( 1, 2, 3, 4 ,5 ) one after another into the container containing the nitrosol , stir very well . Don't stop stirring until 10 to 15 minutes. 😎 Add foam blaster and stir.
9) Add 3 tablespoons of formalin ( for preservative).

10) Mix your colour in plastic water bottle (Eva plastic empty) and pour water and colour and shake very well and pour it into the mixture and stir.

11) Add the perfume and stir and cover.

12) Allow to set till the next morning .
If you stir it and it is thick add more water to it.

ITS THAT TIME OF THE YEAR AGAIN

INGREDIENTS

1,5 litres hot water

1 cup sugar

1 cup powdered milk

1 teaspoon vanilla essence

food colours – red, blue, green, orange

METHODS

Measure 1,5 litres hot
water.
Add 1 cup sugar to the water and stir to mix.
Add 1 cup powdered milk and stir until well dissolved.
Add 1 teaspoon vanilla essence and stir to mix.
Let it cool
Divide mixture into 4 equal parts.

Add a colourant to each portion of mixture to have 4 different colours.
Stir until the colours are completely combined
Pour in ice pop bags and freeze.

FLOWER PASTE RECIPE.
Flower paste is a very elastic sugar medium which can be rolled paper thin. It is used to make flowers or mixed with sugar paste to form modelling paste.

3 tablespoon water
4 teaspoon gelatine
2 tablespoons vegetable shortening
I large egg white
4 teaspoons cmc
500g icing sugar

Measure 3 tablespoon of water into a heat proof bowl and add gelatine to it. When the gelatine has fully soaked up all the water. Immerse into a pan of hot (not boiling)water over low heat. Add vegetable shortening to the melted mixture. When fully incorporated, remove from heat and add to the egg white in a mixing bowl. Add cmc to icing sugar andix with melted mixture with an electric mixer for 5 mintutea. Remove from bowl, knead on working table and seal over night for at least 8 hrs.

PASTILLAGE
This elastic sugar medium dries rock hard and becomes brittle. it is ideal for moulding human figures and objects.

Add cmc to royal icing of a peak consistency. Mix in mixer for 3-5 minutes. Remove from mixer, seal over night or for at least 8hrs.

PARTY NIGERIA DOUGHNUT

Number of doughnut: 500 pieces
Quantity of dough per doughnut: 60g

Ingredients
Flour 7.2kg
Sugar 780g
Yeast 16 teaspoons
Butter 350g
Salt 9 teaspoons
Milk 15 tablespoons
Vanilla flavor 8 teaspoons
Milk flavor 6 teaspoons
Egg 15 pieces

Procedure
Mixall dry ingredients together in a sizeable bowl.

Mix milk/lukewarm water, yeast, egg, melted butter, and vanilla flavor together.
Whisk the content very well to mix properly

Add to your flour mixture gradually the water mixture. Mix with hand very well until sticky.

Transfer to floured work surface and knead dough for 10 minutes adding little flour being careful not to add too much. Dough should be soft.

Grease a container and place the dough in it; brush oil on dough and cover for about 1 hour or until double in size

divied dough into same sizes on a scale of 60g. Dust the surface with four, form each Doug into ball place on work surface allowing them to rest for about 15 minutes.

Using a scraper, press dough ball down and cut center using a piping tip.

Remove excess dough. Place them in dusted tray and cover for 5 minutes.

Start frying in batch making sure the fire isn't too high to allow the inside fry well.

1/2 cup boiling water
1 tbsp cmc
2 tbsp cornflour
1 tbsp icing sugar
1/2 tsp glucose
1 tsp water

*Mix the ingredients in the above order.You should achieve a spreadable mixture after mixing.

*Spread on your preferred lace mat and leave on a table overnight to dry or dry in an oven under very low heat.

*For gold colored lace,mix some quantity of yellow color into your mixture before applying on the lace mat.Then paint in gold when dry.
For other colors,mix in the preferred color and then spread on the mat.

*Once dry,keep in a parchment paper.

*If well made,this recipe should cover the borders of a 3 tier cake-6",9",12"

BUTTER COOKIES

Ingredients:

200 grams pomade butter (blend at room temperature)
120 grams of sugar
280 grams of wheat flour
1 teaspoon vanilla essence

Preparation:

1. In a bowl start by mixing the butter with the sugar. Remember that butter must be at room temperature in order to work well with it. We blend in pretty well.

2. Once mixed, add in the teaspoon of vanilla essence.

3. We continue with the sifted flour. We run the flour through a sinker before putting it into the bowl. We blend in pretty well.

4. Now it's time to shape them up. The easiest thing is to make a roll as you see below with the help of paper film and put it in the fridge for 1 hour or so. From there on, we'll be "cutting slices" of more or less 1 cm and baking them.

5. Put them in a cut oven tray and bake them at 180° for about 11-12 minutes. The moment we see the edges starting to gold we take them out. If you see that they are soft don't leave them anymore because I once made that mistake, when they cool they harden. So don't worry if you touch one and see it soft

Pick which one is best for you, based on what you have at hand.

1 cup buttermilk = 1 Tablespoon white vinegar + 1 cup of milk
1 cup buttermilk = 1 Tablespoon lemon juice + 1 cup milk.
1 cup buttermilk = 1 cup plain yogurt
1 cup buttermilk = 1 and ¾ teaspoon cream of tarter + 1 cup of milk
