Tie Kuan Yin is a famous Oolong (blue tea) with a long history in China. The tea is fermented in several stages, in order to get the traditional taste. During fermentation, to get the right quality, workers must check the process and roll the tea. All the steps need a lot of time, with patience being the main component.
