I don’t bake fast. I bake with time.

My sourdough bread and sourdough cinnamon buns ferment for 22 hours. Not because it sounds impressive but because that’s what they need. That’s when the dough truly comes alive.

I use local Norwegian flour, I fold, shape and roll everything by hand. Every loaf. Every single cinnamon bun.

There are easier ways to do this. Faster ways.
But I choose the slow way for better flavor, better texture, and bread that feels good to eat.

The crust is deeply golden and crisp. The crumb is soft, open and full of aroma. The cinnamon buns are tender, layered, rich with butter and cinnamon with that gentle sourdough depth that makes you want just one more bite.

This is bread made with patience.
Made with care.
Made for my clients who trust me to do it properly.

This flour surprised me. 🔥

I’ve been testing Holli Mølle Norwegian flour over the past few days and I’m honestly SO impressed with the results. The dough is strong, beautifully elastic, and develops like a dream. Amazing structure, volume, and texture in the final bake.

This one is definitely staying in my kitchen. 🥖
