Lemon H**p Cupcakes
Ingredients:
1 cup all-purpose flour
1/2 cup Pure Heart Aotearoa H**p Protein Powder
1/2 cup Pure Heart Aotearoa H**p Hearts
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
Zest of 2 lemons
1/4 cup fresh lemon juice
1/2 cup whole milk
Lemon H**p Frosting:
1/2 cup unsalted butter, softened
2 cups powdered sugar
Zest of 1 lemon
2 tablespoons fresh lemon juice
2 tablespoons Pure Heart Aotearoa H**p Hearts (for garnish)
Instructions:
Preheat the oven: Preheat your oven to 350Β°F (175Β°C). Line a muffin tin with cupcake liners.
Dry Ingredients: In a bowl, whisk together the all-purpose flour, h**p protein powder, h**p hearts, baking powder, and salt. Set aside.
Wet Ingredients: In another large bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Lemon Flavor: Add the lemon zest and lemon juice to the wet ingredients. Mix until well combined.
Combine Dry and Wet Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined. Do not overmix.
Fill Cupcake Liners: Spoon the batter into the cupcake liners, filling each about 2/3 full.
Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely before frosting.
Prepare Frosting: In a bowl, beat together the softened butter, powdered sugar, lemon zest, and lemon juice until smooth and fluffy.
Frost Cupcakes: Once the cupcakes are cooled, frost them with the lemon h**p frosting. Sprinkle h**p hearts on top for an extra nutritional boost and a delightful crunch.
