Forming a few patties, I prefer hand formed for small batches vs bandsawing. These are 100mm and about 125gm/130gm

B***d & Rolled lamb shoulders, might take a little longer to process but I perfer to hand tie rather than use netting. certianly a lot nicer to carve after cooking, also keeping them square helps with even cooking. note - boneless product gets vacuum pack
