Have you heard of World Localisation Day? This takes place each Winter Solstice and celebrates shorter distances between producers and consumers. This has benefits for our local community, our environment and our own health!
Eat New Zealand is supporting this by encouraging everyone to celebrate the shortest day with The Shortest Meal - a meal made from all New Zealand-grown food!
We love supporting local here at Petal & Bee so on Sunday we will be whipping up a beetroot and quinoa salad with feta for our Solstice dinner.
This will use quinoa from Kiwi Quinoa, feta from Hลhepa Organics, pumpkin seeds from Summer Hill Seeds and beetroot, kale and onion from our friends at Live2give ๐. And a squeeze of local mandarin juice and New Zealand sea salt for extra flavour!
