Prawn Summer Rolls with Spicy Glaze Dip 🍤

Fresh rice paper rolls with prawns, crunchy vegetables and thin omelette ribbons – a light, fast-moving dish that suits the first warm days of spring, served with our Spicy Glaze straight up for dipping.

Serves 3-4 (makes about 12 rolls)

INGREDIENTS 🥚

200g rice vermicelli noodles
300g cooked prawns, peeled and halved lengthways
1 cos lettuce, finely chopped
1 cup red cabbage, finely shredded
1 cup carrot, julienned
1 cup mint leaves, picked
2 large eggs, beaten
1 tsp neutral oil, for the omelette
12 rice paper wrappers
Spicy Glaze, for dipping

METHOD 👩‍🍳

1. Soak the rice vermicelli in boiling water for 3–4 minutes until just tender, then drain and rinse under cold water. Set aside.

2. Make a thin omelette: Heat the oil in a non-stick pan over medium heat. Pour in the beaten eggs, tilting the pan to spread thinly. Cook until just set, about 90 seconds, then slide onto a board, roll, and slice into thin ribbons.

3. Have the lettuce, cabbage, carrot and mint ready in separate piles alongside the noodles, prawns and egg ribbons so the rolling line moves fast.

4. Dip one sheet of rice paper in a shallow bowl of warm water for about 10 seconds, until just pliable. Lay flat on a damp board or plate.

5. Time to roll! Near the bottom third of the wrapper, layer a pinch of lettuce, a small tangle of noodles, a few pieces of prawn, a pinch each of cabbage and carrot, mint leaves and a few egg ribbons. Fold the sides in, then roll firmly from the bottom, tucking as you go. Repeat with remaining wrappers and filling.

6. Arrange the rolls on a platter with a small bowl of Spicy Glaze alongside for dipping. Best eaten fresh, within a couple of hours of rolling.

NOTE: Keep a damp tea towel over rolled summer rolls as you work so the rice paper doesn't dry out and crack.

How we celebrated Father’s Day in the Bay this year 🔥

August is always a bit of a celebration month in our house, with both of our birthdays being only 11 days apart.

We kicked it off by sneaking away to Korea for ten days - amazing food, culture and people.  We had so much fun however were very happy to celebrate the actual day at home.

Matt did exactly what he loves to do at this time of year and headed up the mountain with Fin for a birthday ski day. They made it a week day adventure, had an almost empty ski field and, 25 runs later, came home shattered!

Back at home, a dream project is coming together. Our upgraded outdoor living area is nearly complete, with the recent installation of a Flare outdoor fireplace. While it’s not our first Flare, this one really is the bomb and comes with a lot of bach type nostalgia.

We spent all weekend impatiently working through the fireplace’s 40-hour curing process, so Father’s Day yesterday felt like the perfect finale to a pretty special few weeks.

Firing up the coals, cooking a butterflied chicken that was served simply with a zesty coleslaw and sitting around the fire together meant making the most of this surprisingly warm, spring weather!

Travel is special to us, birthdays are always celebrated, and there is something simply divine about being home and spending time with the people we love most.

We’re excited to introduce Richie Hall, our new Production Manager at St Andrews Limes and Six Barrel Soda! 🙌

Richie is the newest member of our team having joined us in August. Richie joins us after almost 30 years in hospitality and professional kitchens.

His career has taken him from Hawke’s Bay to Auckland, Melbourne to London – even aboard a super yacht between Auckland and Vanuatu. He was looking for a change in pace, workplace scenery and, with a couple of young boys, more hospitable hours!

With a combination of creativity and serious kitchen experience he’s a great fit for us. Richie has swapped restaurant service for limes, lemons, syrups, sodas and all the products that come out of our kitchen. 🍋

We’re very happy to have you on board, Richie. 🙏

The daffodils are out at our cellar door 💛

This Friday is Daffodil Day and from now until the end of September, if you’re visiting the St Andrews Limes & Six Barrel Soda - We Make Wonderful Drinks cellar door, you’re welcome to pick some of the fresh daffodils growing outside and leave a koha in the Cancer Society New Zealand | support, research & advocacy collection box on our counter. 🌼

Every day, 81 Kiwis hear the words, "you have cancer".  Daffodil Day is a chance to show our support for friends and family affected by cancer that they are not alone.

We’ll also be donating 10% of all cellar door sales through to the end of September to the collection.

Cancer touches too many lives, always closer than we would ever wish. While our daffodils are flowering, we’d love to turn a little patch of yellow into something more meaningful to those that need it most.

Pop in, pick a bunch, leave a koha — or simply shop with us and know that part of your purchase will be donated.

Upgrade your niçoise with our Saffron Lime Dressing! 🧑‍🍳

Tinned tuna, soft eggs, green beans, olives, potatoes – a niçoise doesn't need much help. But swap your usual vinaigrette for our Saffron Lime Dressing and it goes somewhere totally new. NZ lime juice, garlic, mustard and a good hit of saffron, quietly stealing the show.

Yuzu & Mānuka Whisky Sour 🙌

A whisky sour built around Six Barrel Soda's Yuzu & Mānuka Leaf Syrup. The yuzu brings bright aromatics and the mānuka adds a herbal backbone, creating a layered whisky sour with lots of depth.

INGREDIENTS 🍋 (makes 1)

60ml single malt whisky
25ml Yuzu & Mānuka Leaf Syrup
15ml fresh lemon juice
15ml egg white (or aquafaba for a vegan version)
6 ice cubes, for shaking
1 lemon peel, for garnish

METHOD 🥃

1. Add the whisky, syrup, lemon juice, and egg white to a shaker without ice.

2. Shake hard for about 15 seconds to build the egg white foam.

3. Add the ice cubes and shake again, hard, for 15–20 seconds until well chilled.

4. Double-strain (fine mesh strainer over the shaker's built-in strainer) into a chilled coupe or rocks glass, so the foam comes out smooth and clean.

5. Twist the oils from the lemon peel over the top and rest it on the rim (or drop it in.) Let the drink sit for a minute before serving.
