The new oyster cult: why millennials love a mollusc.

A positive feature recently published in The Times highlights:

More young people are saying oysters are cool. Oyster bars and restaurants are welcoming a younger generation of diners, attracted by the sustainable superfood.
Young people are drawn to oysters’ health benefits — low in calories, but high in protein and nutrients — and their sustainability, with a low environmental impact and actively improving marine ecosystems.

Wright Brothers - seafood supplier and oyster merchant in London, said oyster sales had grown 10 per cent year on year. Their most recent success, however, was introducing £1 oysters during certain happy hours throughout the week.

Bentley's Oyster Bar & Grill , which opened in 1916, has in the past few years started hosting the London Oyster Championships. When the food influencer Georgiana Davies posted a viral video about £1 oysters in their Borough location, the restaurant went from selling 400 £1-a-pop oysters a week to 2,500, prompting a queue out the door.

Maldon Oysters and The Oyster Shed also comment in the article on how they have promoted and expanded the love of oysters among younger consumers.
