I made today a “Black Forest Gateau” as a birthday cake for my husband. The challenge was to create the cake as a “keto” version of the German original.
Instead of flour I used almond flour and instead of sugar I used erythritol which is a natural sugar substitute. I used sour cherries without the syrup and cream just sweetened with liquid sweetener. The only thing not quite keto is the cherry brandy soaked into the layers of the cake my husband didn’t want to relinquish.
