Our story began when Simon Gault returned to New Zealand after working in Italy and France, and couldn't find the high-quality products he had taken for granted overseas. So, he set out to establish a network of suppliers to provide premium quality cheeses, balsamic vinegars, and canned goods for his restaurants and the New Zealand market. Through our international networking, we've been fortunate to establish strong and lasting relationships with several long-established family-run producers who continue to supply us today. Gault's Quick Chicken Gravy

A good roast chicken deserves a good gravy, and this is about as easy as it gets. Using Gault's Chicken Stock Concentrate gives you a rich, savoury gravy in minutes, and if you've got a roast chicken in the oven, adding those pan juices takes it to another level. Simple, quick, and far better than most packet gravies.

Serves 6

Ingredients

3 tbsp white wine
400ml water
3 tbsp Gault's Chicken Stock Concentrate
1½ tbsp cornflour
ÂĽ cup cold water
1 tbsp cold butter (optional)

Method

Add the white wine, water and Gault's Chicken Stock Concentrate to a saucepan.
Bring to the boil and simmer for 2 minutes.
If you've roasted a chicken, add a splash of water to the roasting dish and scrape up all the sticky bits from the bottom. Pour that into the saucepan along with any juices from the resting chicken.
Mix the cornflour with the cold water until smooth.
Slowly pour the cornflour mixture into the saucepan, whisking as you go.
Bring back to the boil and cook for 1 minute until the gravy thickens.
If using, whisk in the butter just before serving.
Serve immediately.

Don't throw away the juices from your roast chicken. That's where a lot of the flavour is.

If there's a layer of fat sitting on top, spoon a little of it off first, then add the rest to the gravy.

Too thick? Add a splash of hot water.

Too thin? Mix another teaspoon of cornflour with a little cold water and stir it through.

So we’re doing it again this Saturday.
Fresh pizza doughs, just $1.50 each. Take them home, let them rise, add your favourite toppings and you’ll have pizza for dinner that night.
We’ve got plenty available, but judging by last weekend, I wouldn’t leave it too late.

This Saturday we've got fresh pizza doughs for just $1.50 each at Gault's Deli.

Take them home, let them rise, stretch them out, add your favourite toppings and you'll have pizza on the table that night.

We've got plenty this week, but judging by last Saturday, I wouldn't leave it too late.

If you've ever wanted to learn the secrets behind great Mexican food and margaritas, we've got something pretty special coming up.

Chef Luis Cabrera will be joining us at Gault's Deli for a series of hands-on Mexican masterclasses packed with flavour, stories, techniques and, of course, some exceptional food and drink.

On 2nd July and 18th July at 6pm, Luis will be teaching traditional guacamole, roasted tomatillo salsa, flute tacos, Mexican street food favourites and a margarita-making demonstration.

Then on 18th July at 3pm, Luis will host his Margarita & Ceviche Masterclass, where you'll enjoy two Besos Margaritas, a guided tequila tasting, fresh guacamole with corn chips, an entrée of ceviche and plenty of delicious tastings from Gault's Deli.

What I love about these classes is that they're not just about following recipes. Luis shares the techniques, traditions and flavours that make Mexican food so vibrant and memorable.

Numbers are limited to just 10 people per class, so everyone gets plenty of hands-on time and the chance to ask questions.

On Saturday 18th July at 3pm, Chef Luis Cabrera will be hosting a Margarita & Ceviche Masterclass at Gault's Deli in St Johns.

You'll enjoy two Besos Margaritas, a guided tequila tasting, fresh guacamole with corn chips, an entrée of ceviche, and some delicious tastings from Gault's Deli along the way.

What I love about this class is that it's not just about eating and drinking. Luis will share the techniques, ingredients and stories behind the flavours, giving you a real insight into what makes great Mexican food and cocktails so memorable.

There are only 10 seats available, so it's a relaxed, intimate experience with plenty of opportunity to ask questions and learn from one of the best.
