Recipe inspo time! Avocado and Citrus Summer Berry Cheesecake - a creamy and refreshing dessert that's perfect for the warmer months.
This no-bake cheesecake is cool, light, and bursting with fruity flavours, making it a delightful treat for summer entertaining 🥑🍓🫐
Ingredients:
Non-stick cooking spray
20cm springform cake tin
3 x firm but ripe Oakridge avocados, roughly chopped
300g cream cheese – room temperature
Zest and juice of 1 x Oakridge lemon and 1 x Oakridge lime
One can of coconut cream
½ cup granulated sugar
½ cup heavy cream
250g gingernuts
100g unsalted butter
To garnish:
Crushed Pistachios
Strawberries
Blueberries
Raspberries
Mint leaves
Instructions:
Begin by spraying the cake pan with cooking spray. Add the gingernuts to a blender or use a rolling pin to crush the biscuits to fine crumbs. Melt your butter and drizzle into the crumbs, combining to a rough mixture.
Line the bottom of the pan with the crumbs and press down hard to form the base. Pop in the fridge.
In a large food processor, add the cream cheese, avocados, zest, and juice from the lemon and lime & ½ cup white sugar. Puree until completely smooth.
Add coconut cream and heavy cream to the mixture and process until the filling becomes thick and creamy.
Pour the mixture on top of the base. Place in the fridge until completely set. 3-6 hours works, but overnight works the best.
Remove from fridge and decorate with fresh berries, mint leaves, and crushed pistachios.
Slice and serve – ENJOY!
