These Pepper & Me crumbed portabellos are crispy…
And perfect to say I love you 🍄‍🟫

Ingredients:
8 large portobello mushrooms, cleaned and stems removed
1 ½ cups plain flour
3 large eggs, beaten
2 cups panko breadcrumbs (or use any Pepper & Me crumb you have on hand)
1 teaspoon Sunshine Salt (Pepper & Me)
1 teaspoon Cutting Shapes (Pepper & Me)
1 teaspoon Sgt. Pepper (Pepper & Me)
Olive oil or vegetable oil, for frying
Hollandaise, for dipping
Fresh parsley, chopped, for garnish

Directions:
Preheat the oven to 100°C fan bake and line a tray to keep the crumbed mushrooms warm after frying.
Set up three separate bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with Sunshine Salt, Sgt. Pepper, and Cutting Shapes.
Dip each portobello mushroom first into the flour, then the egg, and finally coat thoroughly with the seasoned panko breadcrumbs.
Heat a generous amount of oil in a large frying pan over medium heat. Fry the mushrooms for about 3 to 4 minutes on each side until they are golden and crispy. Work in batches if needed to avoid overcrowding the pan.
Transfer the fried mushrooms to the warm oven tray to keep them hot while you cook the rest.

Serve the crumbed mushrooms on a large platter with bowls of warm Hollandaise for dipping. Garnish with chopped fresh parsley.

How to look fancy this Christmas with minimal effort 🤌🤍

Creamy Mushroom Vol-au-Vents 😋🍄‍🟫

Ingredients
Pre-made pastry vol-au-vents (from the supermarket)
1 brown onion, finely diced
1 pack Meadow mushrooms (we used Swiss brown)
20g Westgold butter
1 Tbsp garlic
1 Tbsp fresh thyme
1 Tbsp Worcestershire sauce
Salt & pepper
½ cup cream cheese
¼ cup Parmesan cheese
½ cup mozzarella cheese
Chopped chives, to finish

Method
1.Preheat oven to 180°C and heat vol-au-vents for 10 minutes.
2.Cook diced onion until soft.
3.Add mushrooms and cook until golden.
4.Stir in butter, garlic, thyme and Worcestershire sauce.
5.Season with salt and pepper and cook down.
6.Remove from heat and mix through cream cheese, Parmesan and mozzarella.
7.Fill vol-au-vents and top with chopped chives.

The Viral Baked Mushroom Dip 🤤🍄‍🟫

Ingredients:
Pack of 200gm meadow mushrooms (I used Swiss browns)
20grams of butter
A teaspoon of crushed garlic
A tablespoon of thyme
Large Pinch of salt
1 pack 250gm cream cheese
1 tablespoon Worcestershire sauce
1/2 cup of mozzarella cheese
1/2 cup Parmesan cheese
3/4 bread crumbs

Dice up mushrooms. Put in pan with butter and garlic thyme and pinch of salt. Cook down until mushrooms cooked.

In an oven proof dish (I used a large ramakin). Mix cream cheese, mozzarella paramansen and and Worcestershire sauce. Mix in mushroom mixture.

Pat down with spoon and top with bread crumbs. Put in the oven 200degrees Celsius for 20mins until breadcrumbs golden and you can see cheese bubbling.

And you are done! The most tasty mushroom dip.
