Keto Peanut Butter Almond Flour Cookies
Ingredients:
1 cup almond flour (or ground almonds)
ยฝ cup smooth peanut butter (must be soft and runny)
1 large egg
ยผ cup granulated sweetener
1 teaspoon baking powder
1 teaspoon vanilla extract
Sea salt, for sprinkling on top
Instructions:
1. Preheat the oven to 350ยฐF.
2. In a mixing bowl, combine all ingredients and stir with a fork until a dough forms.
3. Shape the dough into a large ball and cut it into 8 equal slices.
4. From each slice, form two dough balls (approximately 20 grams each) and place them on a baking sheet lined with parchment paper.
5. Flatten each dough ball into disks about 1 cm thick and 5 cm in diameter using a fork to create a crisscross pattern. Sprinkle with sea salt.
6. Bake in the preheated oven for 8-10 minutes (bake for 9 minutes for a soft center).
7. Remove from the oven and allow the cookies to cool completely before handling.

Makes 16 cookies.

Choco Mousse
Ingredients:
3 ounces cream cheese, softened
ยฝ cup heavy cream
1 teaspoon vanilla extract
ยผ cup powdered erythritol
2 tablespoon cocoa powder
1 pinch salt

Chocolate Cake
Ingredients:
CAKE
ยฝ cup coconut flour
5 eggs separated
ยฝ cup erythritol
ยฝ cup butter , unsalted softened
ยฝ teaspoon baking powder
1/3 cup cocoa powder unsweetened
5 tablespoons coconut milk or unsweetened almond milk

Preheat the oven at 180C.
Grease and line an 8 inch springform cake pan with baking paper.
In a bowl, mix the butter and erythritol and blend well.
Add the egg yolks and coconut milk. Combine until smooth
Add the dry ingredients to the wet mixture and whisk until smooth

Spoon the cake mixture into the cake tin and smooth over evenly with a spoon
Bake for 30 minutes.
Remove for the oven and allow to cool.
Assemble cake by placing mousse on top of the cooled cake.
