BALBACUA Recipe ni Mhelay (Cow Skin) Ingredients:
1 kilo cow skin
4 tbsp tomato sauce
2 tbsp fish sauce
1 tbsp group black pepper
4 pcs. medium size tomatoes
4 large size garlic cloves (chopped)
1 medium size onion
2pcs bay leaves
Lemongrass
Peppercorn
Spring onions
2pcs beef cubes
PROCEDURE:
1st. Pressure cooked for 50 minutes ( or depends how tender the meat is) put 4-5 cups of water add 1tbsp salt,peppercorn,lemongrass and bay leaves. Then turn off the fire and set aside note: make sure to follow pressure cookers instructor before opening otherwise it could explode. So, let it cool first before opening it.
2nd. Using butter sauté onion's, garlic, tomatoes then add it on the cow skin. Remove the lemongrass add all the ingredients and 1Litter of water then pressure cooked for another 40 minutes. Adjust the water and condemints depending on your taste
