Sabidukong is a wild vine commonly found in forested areas, where it clings to and climbs tall shrubs and trees. It is known by various names depending on the location:
Sabidukong or Sabsabidukong in Nueva Vizcaya and many parts of the Ilokandia
Dukep in San Fernando City, La Union
Ampupuyat in Piddig, Ilocos Norte
Pusapusa or Patpatayok in Batac
Bagbagkong in some areas
Tirintintin in others
This edible vine produces small flowerettes and young fruit called padpadol, both of which are delicious additions to traditional dishes.
Sabidukong pairs perfectly
with other leafy greens
in dishes like dinengdeng,
especially when
combined with saluyot,
rabong (bamboo shoots),
and grilled or broiled fish like paltat, dalag, or bangus.
It can also be
sautéed, stir-fried, or used as a flavorful garnish
in your favorite
pinakbet or vegetable medley.
