🌾 Salug Irrigation Water System

The irrigation system is a large government-managed water project designed to supply water to rice fields and farms using water from the Salug River.
• 📍 Located mainly in Barangay Lower Salug Daku, Mahayag
• Managed by the National Irrigation Administration (NIA)
• Considered the largest national irrigation system in Region IX (Zamboanga Peninsula) 

Its main structure is the Mahayag Dam, which diverts river water into irrigation canals.

• It was made as a pasalubong (souvenir food)—something instantly noticeable and special to bring home.

• The size reflects the sharing culture of the island; one large piece can be shared with family and friends.

• It is handmade using simple ingredients like flour, sugar, oil, and water, shaped thin and wide through traditional methods.

• Over time, the oversized otap became part of Siquijor’s food identity, simple yet bold—just like the island itself.

Today, the large Siquijor otap is more than a snack.
It’s a symbol of tradition, generosity, and local pride—a crunchy reminder of the island’s culture.
