Product of Japan

Kikurage, or wood ear mushroom (Auricularia auricula-judae), is an edible, ear-shaped fungus popular in Japanese and Chinese cuisine, commonly known for its crunchy, gelatinous texture rather than strong flavor.

It is a staple ramen topping, rich in fiber and iron, and often used in stir-fries or salads.

Key Information about Kikurage

Appearance & Texture: Dark brown, ear-shaped, and jelly-like/gelatinous when cooked.

Usage in Cooking: Frequently served as a shredded topping in ramen, marinated (Ajitsuke Kikurage), or used in salads.

Preparation: Can be bought fresh or dried.

Dried kikurage must be rehydrated in water for a few hours before use, which expands it and improves its texture.

Nutritional Value: Low in calories but high in dietary fiber, iron, and vitamin D.

Other Names: Wood ear mushroom, black fungus, jelly ear, or tengang daga in the Philippines.

Takaokaya "C" 50sheets - Php 920
Yamagataya Nori 50sheets - Php 1,508

Product of Japan

Nori sheets are dried, edible seaweed—typically Pyropia yezoensis—widely used in Japanese and Korean cuisine for sushi rolls (maki), onigiri, and garnishes.

Known for a savory, umami-packed flavor, they are pressed into thin, crisp sheets with a deep green or black color.

They are nutrient-rich but should be consumed in moderation due to high iodine content.

Key Facts & Uses
Production: Shredded and rack-dried from red algae, resembling traditional papermaking.
Culinary Uses: Essential for sushi and kimbap rolls, cutting into smaller pieces for snacks, or topping ramen and rice dishes.
Storage: Nori easily absorbs moisture, so it should be stored with a desiccant to maintain its crispness.
Toasting: Toasted nori provides a crisp texture and enhanced nutty flavor.

Nutritional Value & Health Considerations
Nutrients: Rich in minerals, protein, calcium, potassium, and vitamin A.
Risk: High sodium and vitamin K levels mean it should be consumed in moderation if you have specific dietary restrictions.
Iodine: Roughly two large sheets can provide the daily recommended intake of iodine.

Popular Varieties & Availability
Nori sheets are widely available in grocery stores, typically labeled as "Yaki Sushi Nori" (roasted) or "Kimbap" sheets.

Brands often offer them unseasoned for sushi or seasoned for snacking.

Takoyaki is a popular Japanese street food that originated in Osaka.

It is a ball-shaped snack made with a wheat-based batter filled with small pieces of octopus (tako), hence the name "takoyaki."

The batter is cooked in a specially designed takoyaki pan, which has half-spherical molds.

The cooked takoyaki balls have a crispy outer layer and a soft, fluffy interior.

They are typically garnished with takoyaki sauce (similar to Worcestershire sauce), Japanese mayonnaise, dried bonito flakes, aonori (seaweed flakes), and sometimes topped with additional ingredients like green onion or pickled ginger.

Takoyaki is enjoyed as a delicious and savory snack in Japan and is a popular item at festivals, food stalls, and dedicated takoyaki shops.

Takoyaki Mix
Meticulously crafted flour blend for Takoyaki, seasoned to enhance Umami from succulent Octopus, ensures soft fluffy Takoyaki.

Expect flawless bites with the Takoyaki mix's delightful texture and elevated flavors.

Okonomiyaki Flour
Okonomiyaki is a popular Japanese pancake known for its customizability.

Made from a batter of flour, grated yams, water or dashi, and eggs, it's mixed with ingredients like cabbage, green onion, pork, seafood, and vegetables.

Cooked on a griddle, it's topped with sauce, mayo, bonito flakes, and aonori.

Enjoy its delicious blend of textures and flavors as a main dish or at okonomiyaki restaurants.

How To Prepare
• Add 100g of Okonomiyaki flour to 100 mL of water in a bowl and mix well. Add 300g chopped cabbage (about half), 1 egg, and 100g of your favorite okonomiyaki fillings (squid, prawn, pork, tempura pearls, benishoga ginger, etc.)
• On a hot plate or saucepan over medium heat (200 °C), add a little vegetable oil before spooning out half the okonomiyaki batter into a circular shape. Allow to cook for approx. 4 minutes.
• Carefully turn the pancake over and cover it with a lid. Allow to cook for a further 5 minutes.
• Remove the lid and flip it over once more. Allow to cook for another 1 minute.
• Transfer to plates and serve with okonomiyaki sauce, mayonnaise, bonito fish flakes, and/or beni shoga ginger.
