The key to creating the perfect & crunchiest pistachio knafeh filling for that Viral Dubai Chocolate boils down to how you prepare and cook your Kataifi Pastry.

1. Bring your Kataifi Pastry to room temperature
2. Cut into even-sized pieces and make sure to separate any that have stuck together for an even cook
3. Don’t overfill the pan
4. You can actually try using a dry pan on medium heat (no butter) for a crispier, golden result.
