1. Classic Tandoori Chicken

Ingredients:

• Chicken drumsticks & thighs – 1 kg
• Plain yogurt – 1 cup
• Lemon juice – 2 tbsp
• Ginger-garlic paste – 1 tbsp
• Turmeric powder – 1 tsp
• Kashmiri red chili powder – 2 tsp
• Garam masala – 1 tsp
• Cumin powder – 1 tsp
• Salt – 1 tsp

Method:

1. Make cuts on chicken pieces.
2. Mix yogurt, lemon juice, ginger-garlic paste, spices, and salt.
3. Coat chicken well with marinade.
4. Rest for 2–4 hours.
5. Grill, bake, or cook in tandoor until smoky and fully cooked.

2. Malai Tandoori Chicken

Ingredients:

• Chicken – 1 kg
• Greek yogurt – 1 cup
• Fresh cream – ½ cup
• Ginger-garlic paste – 1 tbsp
• White pepper – 1 tsp
• Cardamom powder – 1 tsp
• Lemon juice – 1 tbsp
• Grated cheese – 2 tbsp
• Salt – to taste

Method:

1. Mix yogurt, cream, cheese, lemon juice, and spices.
2. Add chicken pieces and coat properly.
3. Marinate for 2–4 hours.
4. Cook on grill or tandoor until soft and juicy.
5. Serve hot with chutney and salad.

3. Hariyali Tandoori Chicken

Ingredients:

• Chicken – 1 kg
• Yogurt – 1 cup
• Fresh coriander leaves – 1 cup
• Mint leaves – ½ cup
• Green chilies – 2
• Ginger-garlic paste – 1 tbsp
• Lemon juice – 1 tbsp
• Cumin powder – 1 tsp
• Salt – to taste

Method:

1. Blend coriander, mint, and green chilies into a paste.
2. Mix with yogurt, ginger-garlic paste, lemon juice, cumin, and salt.
3. Add chicken and marinate well.
4. Rest for 2–4 hours.
5. Grill until smoky and golden.

4. Achari Tandoori Chicken

Ingredients:

• Chicken – 1 kg
• Yogurt – 1 cup
• Pickle masala – 1 tbsp
• Mustard oil – 1 tbsp
• Ginger-garlic paste – 1 tbsp
• Red chili powder – 2 tsp
• Fennel seeds – 1 tsp
• Nigella seeds – 1 tsp
• Salt – to taste

Method:

1. Mix yogurt, pickle masala, mustard oil, spices, and salt.
2. Add chicken and cover completely with marinade.
3. Marinate for 2–4 hours.
4. Grill or tandoor cook until charred and juicy.

Mutton Masala (Detailed Recipe)

Ingredients

For Marination

500 g mutton

½ cup curd (yogurt)

1 tbsp lemon juice

1 tbsp ginger-garlic paste

½ tsp turmeric powder

1 tsp red chilli powder

½ tsp salt

For Gravy

2 large onions (sliced)

2 tomatoes (pureed)

2 tbsp oil

2 green chillies (slit)

1 tbsp coriander powder

1 tsp cumin powder

1 tsp garam masala

1 tsp red chilli powder

Salt to taste

Whole Spices

1 bay leaf

1-inch cinnamon stick

3–4 green cardamoms

4–5 cloves

Garnish

2 tbsp chopped coriander leaves

Method

Step 1: Marinate the Mutton

1. In a bowl, mix mutton, curd, lemon juice, ginger-garlic paste, turmeric, red chilli powder, and salt.

2. Cover and marinate for at least 1 hour (4 hours for best results).

Step 2: Prepare the Masala

1. Heat oil in a pressure cooker or heavy-bottom pan.

2. Add bay leaf, cinnamon, cardamom, and cloves. Sauté for 30 seconds.

3. Add sliced onions and cook until golden brown.

4. Add ginger-garlic paste and green chillies. Cook for 1 minute.

5. Add tomato puree and cook until oil separates.

Step 3: Add Spices

1. Add coriander powder, cumin powder, red chilli powder, and salt.

2. Mix well and cook for 2–3 minutes.

Step 4: Cook the Mutton

1. Add the marinated mutton and mix thoroughly.

2. Cook on medium heat for 8–10 minutes.

3. Add 1–1½ cups water.

Step 5: Pressure Cook

Pressure cook for 6–8 whistles or until the mutton becomes tender.

Step 6: Finish

1. Open the cooker after pressure releases.

2. Add garam masala and mix well.

3. Simmer for 5 minutes.

4. Garnish with chopped coriander leaves.

Serving Suggestions

مٹن کلیجی: 500 گرام

پیاز: 2 درمیانی (باریک کٹی ہوئی)

ٹماٹر: 2 درمیانی (کٹے ہوئے)

ادرک لہسن پیسٹ: 1 کھانے کا چمچ

ہری مرچ: 3 عدد

لال مرچ پاؤڈر: 1 چائے کا چمچ

ہلدی: ½ چائے کا چمچ

دھنیا پاؤڈر: 1 چائے کا چمچ

گرم مصالحہ: ½ چائے کا چمچ

نمک: حسبِ ذائقہ

تیل: 4 کھانے کے چمچ

ہرا دھنیا: گارنش کے لیے

ترکیب:

کلیجی کو اچھی طرح دھو کر درمیانے ٹکڑوں میں کاٹ لیں۔

پین میں تیل گرم کریں اور پیاز کو سنہری فرائی کر لیں۔

ادرک لہسن پیسٹ شامل کرکے 1 منٹ بھونیں۔

ٹماٹر، نمک، لال مرچ، ہلدی اور دھنیا پاؤڈر ڈال کر مصالحہ اچھی طرح بھون لیں۔

کلیجی شامل کریں اور تیز آنچ پر 5 سے 7 منٹ پکائیں۔

ہری مرچ اور گرم مصالحہ شامل کریں۔

کلیجی نرم ہو جائے تو چولہا بند کر دیں۔ زیادہ نہ پکائیں ورنہ سخت ہو جائے گی۔

ہرے دھنیے سے گارنش کر کے نان یا روٹی کے ساتھ پیش کریں۔

✅ کلیجی کو زیادہ دیر نہ پکائیں، ورنہ سخت ہو جاتی ہے۔
✅ پکانے سے پہلے 10 منٹ کے لیے تھوڑا سا لیموں کا رس لگا دیں، ذائقہ بہتر ہو جائے گا۔
✅ تیز آنچ پر بھوننے سے کلیجی کا ذائقہ اور خوشبو مزید لذیذ ہو جاتی ہے۔
✅ آخر میں گرم مصالحہ اور ہرا دھنیا شامل کریں تاکہ ریسٹورنٹ جیسا ذائقہ آئے
