I’m not a bbt drinker but I’d love a Tie Guan Yin one if I ever have it. So I decided to make it into a chocolate 😃🍫🍵🧋

I ground my sustainably sourced cocoa beans with Tie Guan Yin tea leaves and organic gluten free oats, minimal amount of low GI organic coconut sugar and cocoa butter for 20ish hours before sifting -> tempering -> molding -> chilling -> unmolding -> wrapping.

The result: creamy dark choco with oats as the first tasting notes before the earthy tie guan yin tea notes emerges and lingers on your palate 😌😋🍫🍵

This limited edition chocolate was produced in a nano batch and all are sold out . Wont be remaking anymore :)

MINT CHOCKIES R BACK!!! 🤩🍫🍪 for two weeks only!!

As always, my chockies are stuffed with lotsa dark chocolate that is handcrafted by me. For this mint chockie, the mint dark choco is made by stone grinding mint leaves with cocoa to make into liquid choco -> aged -> sieved -> tempered/mold/chill/unmold to become solid choco bars -> cut into cubes to be added into cookie. I’ve also brewed mint tea and added into the cookie dough. There is NO mint extract/flavoring/essence used because we all deserve the good, real stuffs 🙌🏻

Soft, chewy, fudgey and absolutely delish and guilt free but made with no eggs, no butter, no white flour, no refined sugar ✌🏻 What’s inside then? Just good-for-you whole foods: fibre rich gluten free oats, omega3 rich chia seeds, evoo, low GI coconut sugar, mint tea + dark mint choco 😋🍫🍪

What’s xmas without smth minty 😛 Bringing to you this xmas is an upgrade of Merry Minty Xmas dark choco…. I call it “MINTY WUNDERLAND” because isn’t it more wunderbar with cocoa nibs sandwiched between 2 layers of mint dark choco for an extra crunch mmm yum 😋🍫🎄

My mint choco won’t taste like toothpaste because it’s not made with artificial mint flavorings. Instead, r e a l mint leaves are stoneground tgt with cocoa, cocoa butter and coconut sugar till wunderfully combined and smooth before I age it for flavors to further develop -> sift mint leaves out -> temper -> mould -> chill -> unmould -> wrap…. Because it’s really labor intensive (not forgetting a pain to wash the sieve/machine with mint leaves & choco stuck to them lolll), I’m making

BONNE SANTÉ 2.0 - My latest choco baby and I’m proud of myself for creating this 😌🍫🥃

In July 2020, I soaked two pots of cocoa with Bénédictine DOM - my first attempt so wasn’t sure how it’d turn out. In Dec 2021, I made one pot of soaked cocoa into chocolate before caramelising it and adding to my own CLASSICO dark choco - everyone loved it and asked for more 🤩 Since then, I’ve been asked countless times if Bonne Santé will be back this year. I wasn’t sure until when I returned from Europe last month, I thought ok let’s do it! ✌🏻

When I opened the second pot, wow the smell was amazing and the cocoa had soaked up all the flavors of the herbal liqueur. I evaporated all the liquid and stoneground it with cocoa butter and organic coconut sugar before ageing for a few weeks. Tbh I was quite stressed because the cocoa was soaked for ~29 months and I don’t have a lot of it (super precious and cannot waste any bit) and I wanted to present it in the best possible way that’s different from version 1. After several tries, I suddenly had a lightbulb moment! I was quite hesitant at first because I wasn’t sure if I could do it… and I did 😌

BONNE SANTÉ 2.0 brings you and me on an adventure with 3 layers of wonders 🤩 Top layer is Bénédictine DOM dark choco that tastes of plum, honey, molasses. I wanted to play with textures and so added red dates (chewy + iron rich) and cocoa nibs (crunchy + antioxidant rich) in the middle layer. Third layer is my CLASSICO 80% dark choco that tastes of red fruits, wine, raisin… I was afraid I couldn’t do this because I had to temper both chocolates at the same time and I’ve never done it before (always felt intimidated to do so). So glad I got out of my comfort zone and now I can show y’all my new love 🥰❤️🍫🥃
