POV: Cooking Lunch in meeting challenge
Pineapple Mala Chicken Sandwich
Ingredients:
Pineapple - small size, 1 whole
Debone chicken thigh 300g
Salt, a pinch
Double Pagoda Mala Sesame Oil, drizzle
Slice bread 2pcs
Cream cheese 2 tbsp
Coral green 50g
Mint leave, garnish
Steps:
1. Halved pineapple for sauce, another half for sandwich.
2. Blend pineapple into puree.
3. Debone chicken thigh place into the Ziplock bag, add Double Pagoda Mala Sesame Oil, salt and pineapple puree. Marinate for 15mins.
4. Pan fry Pineapple slice.
5. Pan fry marinated chicken for both side till golden brown for 2 - 3mins.
6. Toast slice bread. Apply cream cheese on toast.
7. Bed coral green above the slice bread, follow by pineapple and chicken. Garnish with mint leave.
