If you missed our live, here’s how you can bake Honey Madeleines like Chef Philia! 😋
Honey Madeleines (yield at least 2 trays of madeleines):
Ingredients:
150g Zest’s Classic Monk Fruit Sweetener
20g Zest's Zero ‘Honey’+
4 eggs
1 tbsp vanilla essence
160g cake flour
1 tsp baking powder
200g melted butter/ oil
Method:
1. Mix Zest’s Classic Monk Fruit Sweetener and Zest’s Zero ‘Honey’+ together.
2. Add in vanilla essence, eggs, cake flour and baking powder. Mix well together.
3. Melt the butter to 60 degrees and gradually add it into the batter and mix well.
4. Chill the batter for at least 4 hours/overnight before use for best result.
5. Pipe the chilled batter into madeleines cases and bake them at 170 degrees for 12-15 mins until golden brown.
