Gooey, runny, sticky and liquescent (and that’s not a word you’ll often see applied to cheese) Mont d’Or or Vacherin Mont d’Or or Vacherin du Haut-Daubs is so French it should be wearing a beret and carrying a baguette. It’s named after Mont d’Or (Golden Mountain) in the Jura region, Franche Comté, department of Doubs.

Pan-seared foie gras is a simple but elegant French dish that is typically enjoyed on special and festive occasions. It is prepared with a thick slice of foie gras that is shortly seared, preferably on duck fat, and is then merely seasoned with salt and pepper.

The juices from the foie gras are then usually combined with fresh or dry fruit, whiskey, and wines such as Riesling, Port, Sherry, or Sauternes. It is recommended to pair foie gras poêlé with dessert or dry wines.

🚨They’re BACK!! Fresh Morel, a seasonal wild mushroom with a tender, spongy texture and earthy flavour. Delicate and elusive, morels are a gourmet prize once limited to those willing to muck around in the wild searching the forest floor for these harbingers of spring. Morels grow in France but generally resist cultivation. Instead, they must be foraged and harvested from where they naturally grow in the wild.

Freshly flown from France weekly, morels are hollow and have a white- to pale cream-colored stem. They need to be cleaned, but otherwise, require very little preparation before cooking and are best when simply grilled or sautéed.
