Raw mushrooms aren’t going to hurt you, they’re just kind of a waste. Cooking them properly, even just a quick sear, completely transforms the flavor, gives them that texture you actually want to eat, and makes them way easier on your digestion. More importantly, mushroom cell walls are made of chitin, which your gut can’t really break down raw. Heat ruptures those walls and releases the compounds inside, meaning you’re actually getting more of the good stuff from a cooked mushroom than a raw one. Assuming you’re not drowning them in processed junk, cooked is just the better call every time.
