Here’s a poLeaving England with one last beautiful view of Windsor Castle on the journey from London to Bristol. 🇬🇧❤️

It’s been an unforgettable trip—filled with family, wonderful students, new friendships, and so many beautiful memories. Thank you, England, for your warm welcome and for another incredible chapter in my sourdough journey.

Now it’s time to say goodbye and head back home to Bangkok. Back to the bakery, back to teaching, and back to doing what I love most. 🥖✨

One year ago, I took a leap that changed everything—after a simple piece of advice from my baker friend who believes in me, I said yes to teaching my first sourdough class, not knowing it would become one of the most meaningful journeys of my life.

I’m deeply grateful to that friend for the encouragement, to myself for the courage to begin, and most of all to my very first students for believing in me and trusting me with your learning journey. Your confidence meant everything.

Today, I’m proud beyond words. Some of you are now baking and selling over 200 loaves a day, while others are steadily building toward opening your own bakeries. Every path is different, but each one inspires me.

What touches me most is that you continue to share your wins with me and invite me to celebrate your milestones with you. Watching your dreams come to life has been the greatest reward I could ever ask for.

Thank you for being part of this journey. I am so proud of each of you, and I can’t wait to see where your passion takes you next. ❤️🥖🙏

Bim's English muffin dough baking in Sandwich loaf pans.
Recipe
1,200 g. Bread flour
760 g. Milk
300 g. Starter or Discard one week old
80 g. Honey or sugar
22 g. Salt
3 eggs

Mixed everything I large bowl followed with 4 sets of stretch and fold in every 30 minutes (2 hours)

Continuous bulk fermentation another 2-3 hours or until it rises 70% at 25-27 degrees Celsius

Shaping the dough
cut the dough in to your sandwich loaf pan size, roll it up and putting into the pan, rest dough on the countertop to proofing another 2 hours or until double in size. Put in the fridge for cold re**rd 12 hour.

Baking at preheat oven at 220’c for 30 minutes or until inside the dough get 100C’

Proud of my Online class student from Malaysia Edwin Lau, his bread getting better and better everyday 🌹

Bim’s 65% Hydration Sourdough
Recipe

* 500 g bread flour
* 325 g water (65% hydration)
* 100 g active sourdough starter
* 10 g salt

Method

Mix all the ingredients until well combined.

* Slap and fold × 2 sets (15 minutes apart)
* Rest 30 minutes
* Coil fold
* Rest 30 minutes
* Coil fold
* Rest 30 minutes
* Lamination
* Rest 30 minutes
* Coil fold
* Bulk ferment for 3 hours at 25°C

Pre-shape the dough and let it rest for 30 minutes.

Final shape, place the dough into a banneton basket, and proof at room temperature for 3-4 hours.
You can cold re**rd for 12 hours.

Baking

Preheat the oven to 250°C for 30 minutes.

Score the dough and bake with steam for 5 minutes. Remove the loaf, make a second score to encourage a beautiful ear, then return it to the oven and continue baking with steam for another 25 minutes.

Reduce the oven temperature to 220°C, remove the steam, and bake for a further 30 minutes until the crust is beautifully golden brown.

Successful Bim’s Sourdough Class in Bristol UK, we use Flour from Tesco it has 13.6% protein content, easy to develop the gluten, this is what we make from 5 kg. Flour 😋

Bim’s 65% Hydration Sourdough for Beginners in Bristol, UK

Recipe

* 500 g bread flour (13.6% protein, Tesco)
* 325 g water
* 100 g active sourdough starter
* 10 g salt

Method

1. Mix all the ingredients until well combined.
2. Perform 2 sets of slap and folds, 15 minutes apart.
3. Rest for 30 minutes.
4. Perform 1 coil fold, then rest for 30 minutes.
5. Perform another coil fold, then rest for 30 minutes.
6. Perform lamination, (adding the chopped Red Leicester English cheese and black olives evenly throughout the dough). Rest for 30 minutes.
7. Perform a final coil fold, then continue bulk fermentation for 3 hours at 25°C.
8. Pre-shape the dough and rest for 30 minutes.
9. Final shape the dough, place it into a banneton basket, and proof at room temperature for 2 hours.

Baking

1. Preheat the oven to 250°C for 30 minutes.
