A moment of pure happiness during the shoot and the tasting

Today we are proud to present our new 100% Chiang Mai salami with spicy Tomme cheese

A product born from the combination of beautiful Thai black pork and an artisanal Tomme from Chiang Mai, blended directly into the mix to bring character and richness

The salamis are now perfectly aged, revealing a generous texture and beautiful pieces of cheese visible in every slice

A true product with character, just the way we like it 😋 📷

🇧🇪 IPA Vedett Beer Salami 🇧🇪
A bold and unique creation from our Hua Hin workshop.

This artisanal salami is crafted using a Belgian IPA beer from Vedett, combined with red curry and fresh green peppercorns.
A surprising balance between European charcuterie tradition and Thai flavors.

The beer brings subtle bitterness and aromatic depth, while the curry adds warmth without overpowering the meat.
Green peppercorns deliver fresh, slightly spicy notes that elevate the overall experience.

This salami is intentionally crafted with a softer texture, closer to an Italian-style salami than a dry, firm saucisson.
It offers a more tender bite and releases its aromas more generously when sliced thin.

Slowly air-dried for several weeks in our cellar, each piece develops a rich texture and complex flavors.

Made with 100% Thai pork.
No colorants. No flavor enhancers. No shortcuts.

Inspired by SPIANATA CALABRESE🇮🇹

An old Calabrian recipe I was fortunate to rediscover,
inspired by the rustic traditions of Gerace,
where chili is part of the balance, never overpowering the meat.

This salami is defined by its flat shape,
giving a firmer, more even texture,
and a natural concentration of flavors.
Âgée 6 weeks in our cellar,
each piece is rustic and unique.
