I’m always asked: “where should we eat in Tunis?”.
One the very top of my list is always La Spigola in La Goulette, a classic fish bistro of this nostalgic port neighborhood, once called the Little Sicily of Tunis, where Muslim, Jewish, Sicilian and Maltese communities have lived together. It has the white tablecloths, the slightly quirky vibe, and that cult status. After the Kémia (north african version of mezzeh), the best move is to choose a whole fish for the table, grill the fillets, cook the head in spicy tomato sauce with fell (our tiny Tunisian tube-shaped pasta), and add fries and tastira (a cousin of shakshuka) on the side. You always finish with a lemon sorbet.

According to my algorithm, sardines are suddenly every girlie’s favourite superfood. Meanwhile, in my hometown Mahdia, a little fisherman peninsula where life revolves around the sea, sardines have always been… just life. So today I’m spotlighting our most cult sandwich spot, 3am Bachir (Uncle Bachir).
Tuna, sardines, or both (but sardines are the star here), drowned in harissa with pickled veggies and potatoes.
I always find it oddly funny how ingredients so humble and ancestral suddenly become trendy, like it was just discovered, when for many and particularly in the South, they are simply what people grew up eating.
Would be nice to eat it by the sea… But the real ones know: this sandwich must be saucy and be eaten at the counter, fingers messy, with a few local olives on the side. I only had a quarter today because couscous is waiting.
